Ingredients:
* 1/8 cup sesame seeds
* 1/8 cup black sesame seeds
* 2 Ahi tuna steaks
* ? tbsn dark sesame oil
* ? sliced red cabbage
* ? sliced Napa cabbage
* 1 carrots cut into julienne strips
* ? sliced onion
* ? sliced red bell pepper
* 4 ounces snow peas
* Teriyaki stir-fry sauce
* Hot cooked rice

Directions:

1. Combine sesame seeds on a plate and coat both sides of tuna steaks.

2. Heat a large pan over high heat until and cook tuna pan gets very hot. Cook per your liking. Remove from heat, and set aside.

3. Heat sesame oil in saucepan over high heat. Add vegetables, and stir-fry till it's crisp and tender. Put the teriyaki stir-fry sauce to taste.

4. Slice tuna steaks and serve with rice and teriyaki vegetables.

5. Your recipe is ready to eat!


Triple-Cooked Chips

Ingredients:
* 1kg peeled potatoes, cut into chips
* Groundnut oil
* Salt
* Pepper

Directions:

1. Place the chips under running water to wash off the starch.

2. Put the chips in cold water and cook till they're almost falling apart.

3. Take the cooked chips out and let them dry.

4. Freeze for at least 1 hour to remove all moisture.

5. Deep fry the chips little by little in very hot oil. Remove once there's a light crust.

6. Drain the oil on kitchen paper.

7. The chips can be frozen for around 2-3 days at this stage.

8. Whenever you want to eat them, you can deep fry them again will they're golden brown.

9. Add salt and pepper to taste.

10. Enjoy the chips recipe with whatever dip you like!

Spicy Chicken (or Shrimp) Rigatoni

I came across this recipe on the blog Six Sister's Stuff and thought I'd give it a try.  First time I made it, it was too spicy for our liking but I knew that with a little tweaking we would love this pasta.  I cut way back on the red pepper flakes but if you like spicy go for it.  Easily half the recipe for 3-4 servings as it makes 6-8 servings.  I've made this with chicken and shrimp, both very good.  While the pasta is cooking you make the sauce and it all comes together quickly for an easy week night meal. 
Ingredients:
2 boneless skinless chicken breasts, cut into thin strips
1 tablespoon minced garlic
1 tablespoon crushed red pepper flakes (I used only 1teaspoon)
1/2 teaspoon coarse black pepper
1/4 teaspoon salt
4 tablespoons olive oil
2 cups Alfredo sauce (I used a jar of store bought sauce)
2 cups marinara sauce (I used a jar of store bought sauce)
1/2 cup cooked peas (I used 1 cup peas)
1 lb (16 oz) rigatoni noodles, cooked al dente
2 tablespoons butter (I didn't use butter, don't think it needs it)
Sprinkle of fresh Parmesan cheese and a pinch of red pepper flake (if you dare) for garnish.
Directions: 
Cook pasta according to directions.  
In a large skillet on medium-high heat, heat  olive oil. Saute garlic, red pepper flakes, and coarse black pepper for 2-3 minutes. Add in thin strips of chicken breast, 1/4 teaspoon salt, and cook until chicken is cooked through. This should only take a few minutes because the chicken is cut thin. (If using shrimp, saute until cooked and take out of pan (set aside) until end of preparation so not to overcook.
Add in marinara sauce and Alfredo sauce, stir.  Add peas and let sauces simmer for about 5 minutes.  (At this point if making with shrimp add cooked shrimp to sauce)
Combine chicken/sauce mixture with cooked pasta. Garnish with fresh Parmesan cheese, and a pinch or two of red pepper flake.

One of the oldest forms of pasta, lasagna is a flat noodle that you layer with meat and the traditional tomato sauce. However, lasagna has been made long before its association with tomato sauce had even been made.

Making the perfect lasagna is a lot like making any food, you have to experiment, create and let the flavours speak for themselves. Overdoing any ingredient can completely ruin a lasagna dish, no matter how well prepared. Any kind of lasagne has to have the perfect balance between everything you add!

Ingredients (Ragu):
* 50g onions
* 50g carrots
* 50g celery
* 2 cloves of garlic
* 3kg minced chicken
* 300g tomato sauce
* 300g red wine
* 1 ? litres vegetable stock
* Salt

Directions:

1. Heat the oil in a pan and add the vegetables, cooking over a low heat. Add salt and pepper.

2. In another pan, caramelise the meat and add the vegetables to it.

3. Add the wine and cook over a medium flame till the wine evaporates.

4. Add the tomato sauce.

5. Add the vegetable stock, just submerging the meat and cook for an hour.

Ingredients (B?chamel Sauce):
* ? litre milk

* 25g butter
* 30g plain flour
* ? bay leaf
* 2 cloves
* Few black peppercorns
* Pinch of nutmeg
* Parmesan cheese

Directions:

1. Boil the milk, adding all the spices.

2. Heat the butter in a pan and keep adding the flour slowly, whisking throughout. Mix till the butter coats all the flour and gets a sandy consistency. Remove from the flame and add the milk, straining the cloves and peppercorns out.

3. Continue whisking and put it back on a low flame, cooking for 30 minutes.

Finishing Up

1. Cook the lasagna in boiling salted water until al dente.

2. Put it back in a bowl of cold water and dry on a kitchen towel and start layering the lasagna.

3. Spread a thin layer of b?chamel sauce in the base of a deep baking dish. Add a layer of lasagna, covering the sauce.

4. Add another third of the b?chamel sauce and the half of the meat. Sprinkle a little Parmesan.

5. Repeat the process one more time.

6. Cover with the last layer of lasagna sheets and spread the remaining sauce on top. Add the remaining Parmesan.

7. Bake until deep golden brown on top.

How To Cook Lasagna With A Little Twist (rajiv tiwari)

Butternut Squash Lasagna is one of those unusual dishes that will leave you surprised with its yummy taste. Butternut Squash Lasagna

Ingredients:
* ? butternut squash chopped into cubes
* Extra-virgin olive oil for drizzling
* Salt and pepper to taste
* ? pound ruffle-edge lasagna noodles, broken
* 2 cloves garlic, finely chopped
* ? medium head endive , chopped
* About ? cup chicken stock
* ? cups fresh ricotta cheese
* A small handful of thinly sliced sage leaves
* ? cup grated Parmigiano-Reggiano
* 1 tablespoons butter
* 1 tablespoons flour
* 1 cup whole milk
* Freshly grated nutmeg to taste
* ? pound Italian Fontina cheese

Directions:

1. Heat the oven to around 400?F.

2. Put the squash on a baking sheet and lightly add a drizzle of extra-virgin olive oil and salt and pepper to taste. Cook till the squash is golden at edges and tender.


3. Bring a large pot of salted water to a boil and cook the lasagna a little lesser than al dente.

4. While the water is cooking the lasagna, heat a tablespoon of extra-virgin olive oil over medium flame in the pan. Add garlic and stir, then add endive and wilt. Add a little salt and pepper to taste, add stock and simmer gently until ready to use.

5. In a bowl mix the together ricotta, sage, salt, pepper and cheese.

6. In a saucepan, melt the butter over medium heat. Whisk in flour, cook and then add the milk. Raise the flame and add salt, pepper and nutmeg to the sauce. Let sauce thicken and taste to check seasoning.

7. Drain the lasagna noodles and add to the pot. Stir in ricotta cheese mixture, mix thoroughly and then add the roasted squash and endive.

8. Transfer to a casserole and pour the milk sauce. Cover with small layer of Fontina cheese and place in the oven to bake till it's bubbly and brown.

9. Serve your lasagna hot!

Very Chocolatey, Chocolate Fudge Cake



Very Chocolatey, Chocolate Fudge Cake
This cake is a chocoholics dream!  This cake has chocolate, chocolate and more chocolate to create this fantastically fudgey, rich & moist cake.

Makes 12 slices
Preparation time:  30 minutes
Cooking time:  50 minutes


Ingredients

For the cake
220g plain chocolate, chopped (minimum 70% cocoa solids)
200g butter, cubed (plus extra for greasing)
100ml water
125g self raising flour
125g plain flour
25g cocoa powder
200g light muscovado sugar
200g golden cater sugar
3 free-range eggs
75ml crème fraiche

For the chocolate buttercream filling
50g plain chocolate (minimum 70% cocoa solids)
100g unsalted butter, softened
200g icing sugar
1 tsp vanilla extract
Drizzle of milk to loosen

For the chocolate ganache topping
150ml double cream
1 tsp vanilla extract
1 tsp unsalted butter
150g plain chocolate, plus extra to decorate

Preparation method
1.    Preheat the oven to 170ºC/335ºF/Gas Mark 3 and line two 20cm sandwich tins with baking parchment,
2.    In a saucepan melt together the chocolate, butter and water on a low heat, stir occasionally until smooth and then set aside to cool slightly.
3.    In a large bowl sift the flours and cocoa powder and mix in the muscovado and caster sugar.  In a separate large bowl beat together the eggs and crème fraiche, then add the chocolate to the mixture.  Now gently fold through the flour & sugar mixture until smooth.
4.    Divide the cake mixture between the two cake tins and bake in the oven for 35-40 minutes, or until the top is firm to the touch.
5.    Remove the cake tins from the oven and set aside until they have cooled completely.
6.    For the chocolate buttercream filling, melt the chocolate in a bowl over a pan of simmering water.  (Make sure that the bowl does not touch the water).
7.    In a separate bowl beat the butter until soft and then gradually beat in the icing sugar.  Now add the vanilla extract and fold in the melted chocolate until smooth (add a drizzle of milk if the mixture is too stiff).
8.    For the chocolate ganache topping, heat the cream, vanilla extract, butter and chocolate in a large pan.  Remove the pan from the heat and then whisk until the mixture is smooth and thick.
9.    To assemble the cake, carefully remove the cakes from the tins.  On the top of one of the cakes spread the buttercream and then top with the other cake.
10.  Spoon the chocolate ganache over the top of the cake and allow to drizzle over the edges or smooth over the whole cake with a palette knife.  Garnish with chocolate of your choice, enjoy!!

Lemon-Poppy Seed Dressing

In time for Easter.
 This is a nice, lemony, slightly sweet dressing that
 is perfect for a Spring salad.
 Make a simple salad with chopped romaine lettuce.
 It's nice topped with croutons 
(homemade would be best)
and thinly sliced red onions if you wish.
 Assembled ingredients.
 Juice from 1/2 lemon for 2T and 1t grated zest. 
 Add mayonnaise, Dijon mustard, sugar, salt, and pepper.
 Whisk it until creamy and add the poppy seeds.
I used 1 romaine heart, chopped to make about 4C.
Wash and spin chopped romaine to make
sure it's dry so the dressing will cling.

Toss the romaine with the dressing
until well coated. Taste to see if it needs
more salt and pepper.
Add croutons and thinly sliced red onion.


Lemon-Poppy Seed Dressing
 – serves 2

Whisk:
1 T sugar
2 T  fresh lemon juice
2 T  mayonnaise
1 t    minced lemon zest
 1 t   Dijon mustard
½ t  poppy seeds
Salt and pepper to taste

Toss:
I heart chopped romaine lettuce
Croutons
Thinly sliced red onion – not much

2. Add the lasagna to large pot of salted boiling water and cook until al dente. Drain and set aside.

3. Meanwhile, put a little oil in a large saucepan over a medium flame. When it's hot, add mushrooms, onion, garlic, salt and pepper (to taste). Keep stirring. Cook till the onions have softened and all the mushroom liquid has evaporated. Add the tomatoes and adjust the flame so the mixture simmers steadily and keep stirring occasionally till the mixture is thick and saucy.


4. Mix the ricotta, parmesan, milk, basil, thyme and rosemary in a bowl. Add the salt and pepper to taste. Spread about half the tomato sauce in the greased pan. Arrange about ? of the lasagna over the tomato sauce, then cover the lasagna with about ? of the remaining tomato sauce, followed by about ? of the cheese mixture. Repeat again. Add a final layer of lasagna and cover it with the remaining tomato sauce. Arrange the mozzarella in a single layer on top.

5. Bake the lasagna till it's bubbly and heated through.

6. Serve your lasagna recipe hot, hot, hot!

7. You can store the leftover lasagna in an airtight container in the refrigerator for a few days.

4. Smooth a third of the enchilada sauce over the baking dish and put the lasagna substitute - tortillas on the bottom of the pan. The tortillas layer should be around 4 layers.

5. Add half of the chicken mix over top of the tortillas and spread it evenly.

6. Layer more of the lasagna - tortillas on top of the chicken mix. Put yet another third of the sauce over tortillas.

7. Sprinkle half of the cheese on top and add green chillies over the cheese. Add all the chicken mix again and spread properly.

8. Add more lasagna - tortillas over the chicken and sprinkle all the remaining cheese on top. Garnish with the olives and scallions.

9. Bake for around fifteen minutes till the lasagna - tortillas is hot throughout.

10. Remove from the oven and add the cilantro on top.

11. Serve the lasagna hot and enjoy!

Pork Loin Stuffed with Chorizo & Caramelised Apples Served with Cider Fondant Potatoes, Glazed Carrots & Buttered Cabbage


Pork Loin Stuffed with Chorizo & Caramelised Apples Served with Cider Fondant Potatoes, Glazed Carrots & Buttered Cabbage

This Sunday roast is full of flavour, every mouthful tantalises your taste buds.  The apple and pork combination is enhanced with the chorizo to make this dish absolutely delicious!
Serves 4
Preparation time:  30 minutes
Cooking time: 2 hours (including resting time)

Ingredients
For the pork loin
1 pork loin (about 1.5kg), bone removed, skin scored
sea salt and freshly ground black pepper
1 tbsp butter
2 apples, peeled, cored, diced
100g/7oz cooking chorizo, chopped
1 medium onions, chopped
2 garlic cloves, minced into a paste with 1 tsp sea salt
2 heaped tsp fresh thyme leaves
2 tbsp extra virgin olive oil
1 onion, peeled and cut into wedges

For the cider fondant potatoes
6 medium floury potatoes, such as Maris Piper
25g butter
2 tbsp olive oil
2 garlic cloves, bashed
few sprigs thyme
300ml cider
300ml chicken stock

For the glazed carrots with thyme & garlic
600g small carrots, peeled
1 litre vegetable stock
1 thyme sprig
½ head of garlic (cut horizontally)
1 bay leaf
Olive oil, for cooking
Sea salt & freshly ground pepper
Few knobs of butter
1-2 tsp caster sugar

For the buttered cabbage
1 Savoy cabbage, finely sliced
Sea salt & freshly ground pepper
25g unsalted butter

For the gravy
200ml red wine
200ml chicken stock
1 tbsp cornflour
Sea salt & freshly ground pepper


Preparation method

1. Preheat the oven to 160°C/Gas Mark 3.  Season the pork with sea salt and freshly ground black pepper and set aside.

2.  In a large frying pan heat the butter and add the apple pieces. Cook without stirring for a few minutes until the apples start to caramelise. Toss and cook for a few minutes more until caramelised all over. Remove the apple from the pan and set aside.

3.  Add the chorizo to the same pan and fry for 3-4 minutes. Now add the onion and gently fry with the chorizo until the onion is softened and the chorizo is nicely coloured. Add half the garlic and half the thyme, and cook for a further 30 seconds.

4.  Spread this chorizo mixture onto the cut side of the pork(not the skin side), roll up and tie with string.

5.  In the frying pan heat the olive oil and brown the pork on all sides. Smear the rest of the garlic and thyme into the crackling, seasoning it with salt and pepper. Place the wedges of onion into a roasting tin resting the pork on top and place in the oven and cook for about 1 hour 15 minutes-1 hour 30 minutes, basting the joint in its juices from time to time. Twenty minutes before the end of the cooking time, increase the heat to 210°C/Gas 6-7, to crisp the crackling.  When the pork is cooked, remove the meat from the pan and rest in a warm place for 15-20 minutes, covered with foil.

6.  For the cider fondant potatoes, peel potatoes and trim the two longer sides so potatoes lie flat on both sides. Heat butter and oil in a frying pan large enough to hold all of the potatoes. When the fat is hot, fry on both sides until dark golden, around 10-15 mins, then add garlic and thyme.

7.  Pour in enough cider and stock to go halfway up the side of the potatoes. Simmer for 20 minutes, then turn and cook the other side for 20 minutes. Top up with cider and stock if the liquid evaporates. Transfer to oven for 10 minutes at 180°C/Gas Mark 4 once the pork is resting, until cooked through and most of the liquid has evaporated.

8.  For the glazed carrots with thyme and garlic, place the carrots into a pan and pour over the stock.  Add the thyme, garlic and bay leaf and parboil for 8 minutes.  Leave the carrots to cool in the stock and then drain.  Heat the oil in a pan and add the carrots and season well.  Sauté for 2 minutes then add the butter and a sprinkling of sugar, cook for 3-4 minutes until tender and fully glazed.

9.  For the buttered cabbage, blanch the cabbage in a large pan of salted water for 2 minutes.  Drain, if not serving immediately refresh under cold running water.  Drain well and just before serving, melt the butter in a large pan, add the cabbage and season well.  Toss on a medium heat for 1-2 minutes until the cabbage is just tender.

10. For the gravy, spoon off any fat from the roasting tin then put it on the hob and stir in the red wine and let it reduce by half.  Now add the stock bring to the boil and stir constantly.  Remove from the heat and pass through a sieve into a pan.  Place the pan on the hob and bring to a simmer.  Mix the cornflour with 2 tbsp of cold water and mix in a bowl until smooth.  Stir it into the gravy and simmer for 2 minutes until the gravy thickens.  Season to taste and keep on a low heat until the pork has rested.

11.  To serve, carve the pork into slices and serve on warm plates with the fondant potatoes, glazed carrots, buttered cabbage and gravy – enjoy!
