Vietnamese Inspired Chicken & Cabbage Salad (Paleo)

Once upon a time...long long ago, a little American girl packed up with her family and moved to Southeast Asia. As you might imagine this was quite an adventure! It was filled with new smells, tastes, sounds, colors and many more things the girl had never experienced before.

The open markets in Asia remind me of the farmers markets here, only on steroids. They're

Dairy Free Hot Cocoa W/Peppermint Marshmallows (GAPS, Paleo)

"Baby it's cold outside", and even if it's not (like here in Texas) you can still enjoy a nice warm cup of hot cocoa with a big huge marshmallow on top.

I remember my mother making different homemade hot cocoa mixes when I was younger. She would keep the mixes in tins, readily available to warm our freezing little bodies after a long day of snow ball fights and igloo building! My

Perfect Dairy Free Almond Flour Pancakes (Grain/Dairy Free)

Oh MY! Fluffy pancakes are the best, and can I just add...I have been through the ringer (and 15lbs of almond flour) to get some! There are a lot of recipes out there. Some of them by amazing cooks too. But none of them were turning out the way I had hoped. They were either too soggy or too clumpy and worst of all, would stick to the pan. Finally after much tinkering I think I have it!

This makes it soft and ready to soak in the sweet honey syrup. After boiling, the peel is then simmered in a water/honey mixture, till the syrup becomes a wonderful gooey mess. Then the peels are coated in powdered

Gluten Free Carrot Cake Minis w/honey-yogurt topping

I am a baker at heart. I love to bake and after 15 years of making wedding cakes, french pastries, tarts and dreaming of my own little bakery shop, you can bet that "gluten intolerance" was not a popular diagnosis for me. When my doctor said no gluten again EVER I knew I had some soul searching to do. Ok, I admit that might be an over exaggeration. But I did have some serious

Well there are a few reasons but mainly an allergy or a sensitivity to "Night Shade Plants" Now you might ask "What is a night shade plant?" And I would say that is an entire post by itself. However night shades do include, tomatoes, potatoes, peppers, and eggplant.

All these foods are good
