Why That Bottle of Spicy Mustard Sauce Deserves a Spot in your Pantry. (Jeric James)

Mention the word mustard and the image of a deli-hotdog sandwich immediately pops up into mind. It wasn't exactly a favorite condiment in the house, no thanks to its pungent and tangy taste. But as you learn things along the way, it came to my attention that mustard seeds are known to be very healthy for the human body. Hence, the oils or sauces made from these seeds may have several therapeutic health benefits.

Gourmet mustards, as they are famously marketed, are made from the seeds of a mustard plant which is a vegetable related to broccoli, Brussels sprouts and cabbage. While there are approximately forty different varieties of mustard plants, there are three principal types commonly used for culinary purposes namely:

* Black Mustard (brassica nigra) - a round hard seed, smaller and much more pungent.
* White Mustard (brassica alba) - milder than their black counterpart, usually yellow in color, and are the ones used to make American yellow mustard.
* Brown Mustard (brassica juncea) - dark yellow in color, has a pungent acrid taste and is the type used to make Dijon mustard.

This incredible condiment can be used in its whole seed form, as a ground powder or grinding it into a smooth paste. To make flavors interesting, people came up with spices to add into its paste such as pepper, garlic, and paprika, along with a dash of salt. Research has it that there is no part of the mustard plant that cannot be utilized. Although less preferred than its most popular counterparts like ketchup, mayo and butter, the mustard has proven to be versatile in the kitchen.

Many supermarket shelves now carry lines of prepared mustard ranging from the mild yellow variety (favorite for hotdogs) to Dijon and Bordeaux mustards which derive their distinct flavors from the French wines they are made with. There are also hot mustards which are peppery and brown such as English, Dusseldorf, German and Bahamian. American horseradish mustard is also particularly spicy.

Stir Fry Sauce

Stir fry sauce is generally that ingredient simply responsible for flavor to your stir fry. Most often, stir fry are made of Oriental ready to use sauces like the soy sauce, the hoisin flavor, the fish flavor, the teriyaki flavor, the chili oil flavor, the oyster sauce and more. For you to get started with here are a few concoctions that may help you begin creating a perfect stir fry at home.

1. THE ALL PURPOSE STIR FRY SAUCE:
INGREDIENTS:
1 ¼ cup of soy sauce
one cup of oyster flavor
One cup of maple syrup (Not the maple flavored only syrup, or simply use brown sugar instead)
½ cup rice vinegar
¼ cup Dijon mustard, to taste.

THE PROCEDURE:
Mix all the ingredients in a mixing bowl until they are smooth. Then you can store them in a sealed bottled on your refrigerators and can last for a week. Shake the bottle before using the flavor in your frying. Can be good for beef, pork, shrimps, scallops and even squid fries. Enjoy them at home.

2. THE KUNG PAO ASIAN SAUCE:
THE INGREDIENTS:
Soy sauce
Sherry wine
Water
Garlic
Red chili peppers, rice vinegar
Ginger
This is a ready-made stir fry flavor available in the supermarkets and they are great with beef, shrimps, squids, and pork. Just use 2 to 3 tablespoons of this concoction and you are on your way to a perfect stir fry serving 2 to 3 persons. But if you want added flavor, you can use additional tablespoons of this sauce plus grated ginger and sliced onions.

3. THE OERIENT EXPRESS STIR FRY SAUCE: This takes 10 minutes to prepare and makes four servings.
INGREDIENTS:
2/12 cup of chicken broth, fat free or low sodium type
1/2 cup corn starch
½ cup soy sauce, lite and low sodium type
½ cup light corn syrup
½ cup dry sherry
¼ cup cider vinegar
Two cloves of garlic, minced
Two teaspoon of grated fresh ginger
¼ teaspoon of ground red pepper or hot pepper flavor

THE PROCEDURE:
In a 1 ½ quart jar with tight fitting lid, combine the chicken broth, the cornstarch, the soy sauce, the corn syrup, the sherry, the vinegar, the garlic, the ginger and the red pepper. Shake them well. Can be refrigerated up to three weeks. But shake them well again before using in a stir fry. This recipe makes about four cups. In stir frying you can add the flavor according to the recipe of your stir fry. If you are only cooking for four servings, then you only need one half cup of the sauce or even less if you don't want it bubbling with the sauce.

Once you are done with this, add spices to adjust to the liquid levels. Add more salt and pepper and taste. With this, your instant pizza sauce is ready to use. You can use right away or keep it in refrigerator for a couple of hours so that the taste develops further. The choice is yours!

Black Bean Salsa

This is great on grilled salmon and so much more.
Black Bean Salsa
1 can black beans, rinsed
1 jar salsa
2 T brown sugar
Stir to combine. 
Make ahead to let the flavors mingle.
Serve as a garnish with grilled
meat, fish or chicken.
Or serve as a dip. 
 Just 3 ingredients!
  You probably have everything in your pantry.
It gave my leftover roast pork slices
a whole new flavor. You can heat the salsa too,
then spoon on leftover chicken and pork.
YUM!
Or just serve it as a dip, or wrap in a lettuce leaf
for munching.

Mustard-Parsley Sauce for Corned Beef & Cabbage

I wanted to get this posted in time for you to try.
This is a great little sauce to serve with your 
St. Patrick's Day corned beef and cabbage dinner.
You just need to scoop out a cup of broth
that the corned beef has been cooking in.
It gives it great flavor.
Mustard-Parsley Sauce
2T butter
2T flour
1 C milk
1 C reserved cooking broth
from the corned beef
1/2 t salt
1/2 t pepper
2 T Dijon mustard
1 T cider vinegar
1/4 C chopped fresh parsley
In a saucepan melt the butter over medium heat. 
Whisk in the flour. Cook, stirring until smooth and 
bubbly. Whisk in the milk and broth. 
Bring to a boil, stirring, reduce heat to low
and whisk until thickened (about 3 minutes). 
Remove from heat and whisk in the
 salt, pepper, mustard, vinegar and fresh parsley. 
Put into a gravy boat to pass.
Serve with the corned beef and cabbage

Spiced Cranberry Chutney

You'll love this cranberry chutney on everything.
 from turkey, ham, pork, chicken,
on sandwiches and baked brie.
Bake brie in 350 oven until soft, about 8-10 minutes.
spread with cranberry chutney  and serve
with crackers or baguette slices.
Also good on cream cheese.
Fresh cranberries and a few basic ingredients.
 Combine in a saucepan and bring to a boil.
 Reduce heat to low and cover for 30 minutes.
 It will thicken.
 Serve at room temperature.
Spicy, tart and sweet. A perfect
condiment for Turkey.
Refrigerate leftovers for up to 2 weeks.

Spiced Cranberry Chutney
1 C cranberries
1/2 C brown sugar
1/4 C cider vinegar
2 T orange juice
1/4 t cinnamon
1/8 t ground cloves
1/8 t ginger
Combine in a saucepan, bring to a boil 
then reduce heat to low and cook 
covered until thick, about 30 minutes. 
Serve at room temperature
 or chill up to 2 weeks.

the BEST Hollandaise Sauce

The BEST Hollandaise Sauce
This has to be the best Hollandaise Sauce! 

Serves 4-6 makes 300ml
Prep time: 5-10 minutes
Cooking time: 20 minutes
Ingredients
500ml white wine vinegar
1 tbsp peppercorns
1 bunch of tarragon
3 large free range egg yolks
250g unsalted butter, chopped
1 squeeze of lemon juice
Freshly ground salt & pepper

Method

1.  Boil the vinegar with the peppercorns and tarragon, reduce by half.  Strain and set aside.  You only require 2 teaspoons of the vinegar so let the vinegar cool and then store for the next time.

2.  Heat the butter in a shallow pan.  When it begins to foam remove all the froth and scum with a large spoon.  Leave to cool.

3.  Boil a large pan of water and reduce the heat to a simmer.  Place the egg yolks and 2 tsp of the reduced vinegar into a heatproof bowl that fits over the pan and beat with a large balloon whisk.

4.  Beat vigorously until the mixture begins to produce a foam, but make sure that it does not get too hot.  To prevent this continue to place it on and off the heat whilst you whisk.  The aim is to achieve a golden, airy form.

5.  Whisk in a small ladle of the warmed butter, a little at a time.  Return the bowl to the heat whilst continuing to whisk.  Remove from the heat again and whisk in another small ladle of butter.  Repeat until all the butter is incorporated and it is the texture of thick mayonnaise.  Finally, whisk in a squeeze of lemon juice, salt and pepper to taste.  If the mixture is too thick add a little warm water from the pan.  The sauce is now ready to serve.


Cooks Tips
v  Salt breaks down the yolks if you add it too early, so season your sauce just before serving.
v  If the sauce mixture starts to split or curdle immediately scrape the mixture into a clean bowl and whisk in 1 tbsp of ice cold water, then continue to whisk in the remaining butter.

Two flavorful butters to serve with hot from the oven popovers, biscuits, scones, waffles, even toast.
Raspberry Butter
1 stick butter, room temperature
1/3 raspberry preserves (I prefer seedless)
Combine in a small bowl and beat until fluffy and blended with a mixer.
Spoon into a small pretty crock.
You can also use strawberries.

Cinnamon Honey Butter
1 stick butter, room temperature
3 T honey
1-1/2t cinnamon
Combine in a small bowl and beat until fluffy and blended with a mixer.
Spoon into a small pretty crock.

Keep leftover butters covered in the refrigerator.
Have one of each and decide which is your favorite. I still can't decide.

Easy Bearnaise Sauce






When my daughter Kim was a little girl she would make pretend bearnaise sauce in the bathtub with her toys. She would use her "Julia Child" voice. Her idea of a kid's meal in a restaurant was either the escargots or a lobster tail. The waiter was always amazed. Later her little friend introduced her to Spaghetti-O's. I still can't smell them without gagging.

Here's an easy bearnaise sauce recipe  that doesn't require a double boiler or reducing the liquid. It's a variation of my easy hollandaise sauce (which I'll post later). It's my favorite sauce! It's a buttery, tarragon sauce that's fabulous with steak. I love eating at French bistros. One of my favorites is the Steak Frites (steak and fries) to say French fries would be redundant. It's always served with bearnaise sauce. Now you can have a little French bistro at home. Bon Appetit!

Easy Bearnaise Sauce

1 stick butter, cut up
1 T lemon juice
1 T tarragon vinegar (or white wine vinegar)
1 T minced fresh chives (here)
1/4 t salt
1/2 t dried tarragon
2 XL egg yolks
pinch pepper or cayenne

Combine all ingredients in a saucepan. Place over low heat. Whisk until the butter melts, then whisk constantly until thickened. Immediately remove from heat otherwise it will break down. Whisk again.


tip: use the chives from you herb garden.
