A Basic Pasta Recipe - The Best Macaroni And Cheese (rajiv tiwari)

Ingredients:

* 1 ? cups cubed peeled butternut squash
* ? cups low sodium chicken broth
* ? cups fat-free milk
* 1 garlic cloves, peeled
* 1 tablespoons plain, flavourless yogurt
* Salt to taste
* Freshly ground black pepper to taste
* ? cups Gruy?re cheese, shredded
* ? cup pecorino Romano cheese, grated
* 4 tablespoons fresh Parmigiano-Reggiano cheese, finely grated
* ? pound uncooked Cavatappi
* Cooking spray oil
* ? teaspoon olive oil
* ? cup breadcrumbs
* 1 tablespoon fresh parsley, finely chopped

Directions:

1. Start your pasta recipe by preheating your oven to 190? C.

2. Mix the squash, broth, milk, and garlic in a medium saucepan and stir well.

3. Bring the mixture to a boil over a high flame for the sauce of the pasta recipe. As soon as the sauce starts boiling, reduce the flame to a medium and continue cooking on a simmer till squash is tender and cooked when pierced. Remove the pan from the flame and keep it aside for the pasta recipe.

4. Add the squash mixture you've made to a blender or food processor.

6. Add the sauce to a bowl and carefully stir in Gruy?re, pecorino Romano and 1 tablespoon of Parmigiano-Reggiano. Stir very well till it's combined for the pasta recipe.

7. Bring a large pot of water to boil and salt it generously. Cook the pasta in it till al dente mentioned on the package.

8. Add pasta to the sauce you've made and stir very well until mixed thoroughly for a perfect pasta recipe.

9. Spread mixture evenly into a baking dish that you've coated with cooking spray.

10. Heat the olive oil in a medium pan and keep it over a medium flame. Add in the breadcrumbs and cook the mixture until it's a nice golden brown. Remove from the flame and stir in remaining Parmigiano-Reggiano cheese to add a nice flavour to the pasta recipe. Sprinkle this mixture evenly over the hot pasta mixture. Add a light layer of cooking spray on top as well.

11. Bake at 190? C for until the pasta recipe is nice and bubble.

Tagliatelle with Feta Pesto
If you love pesto you will adore this velvety feta pesto!  This dish is absolutely delicious and even better it is a super quick & easy dish to make!

Serves 2
Prep time:  5-10 minutes
Cooking time: 10-12 minutes

Ingredients

200g/7 oz tagliatelle
1 handful of pinenuts, toasted (plus extra for serving)
1 small clove of garlic, peeled & chopped
1 large bunch of basil, chopped
100g/3 ½ oz feta cheese, crumbled (plus extra for serving)
3 tbsp extra virgin olive oil (plus extra for serving)
Freshly ground pepper

Method

1.  Cook the tagliatelle as per packet instructions.

2.  In a food processor blend the pinenuts, garlic, basil, feta cheese and oil until you have a smooth paste.

3.  Drain the pasta and mix through the pesto.  Serve in pasta bowls, top with a sprinkling of toasted pine nuts, feta cheese and a drizzling of olive oil.  Enjoy!

Leek and Roquefort Tart with Caramelised Apple and Pine Nut Dressing


Leek and Roquefort Tart with Caramelised Apple and Pine Nut Dressing
This is a wonderful starter which you can prepare in advance to create this delicious dish.

Makes 4 Individual Tarts
Prep time:   15-20 minutes
Cooking time: 35 minutes

Ingredients
500g/1lb 2 oz ready-made short-crust pastry
25g butter
1 leek, finely shredded
100g/3 ½ oz Roquefort cheese
2 tbsp double cream
4 free range eggs


For the Apple & Pine Nut Dressing
3 tbsp extra virgin olive oil
1 tbsp red wine vinegar
2 tbsp pine nut kernels
1 tsp finely chopped chives
Pinch of salt and black pepper
25g butter
2 dessert apples (Cox are good)
3 tsp sugar

To serve
Basil leaves to garnish


Method

1.  Roll out the ready-made pastry and cut out 4 rounds 13cm/5in in diameter.  Use to line 4 individual tartlets about 10cm/4inches.  Prick the base all over with a folk and place in the refrigerator for 30 minutes to let the pastry rest.

2.  Preheat the oven to 180°C/350°F/gas mark 4.

3.  For the best results blind bake the tartlets first.  Line the pastry case with foil and add the baking beans.  Place on a baking tray and place in the oven for 12-15 minutes, remove the foil and beans and bake for a further 5 minutes.

4.  In the meantime melt the butter in a frying pan over a medium heat and add the shredded leeks and cook until softened but don't allow them to colour.

5.  Divide the leeks equally between the pastry cases.  Beat together the eggs and cream and pour into the pastry cases and crumble the Roquefort into the tarts. Pop the tarts back into the oven and cook for about ten minutes or until the cheese have melted and the egg has just set. Remove from the oven and set aside to cool.

6.  Core the apples and leaving the skin on, cut them into quarters then divide the quarters again.  This will give you four thick wedges for each serving. Melt the butter in your frying pan. Add 2 tsp of sugar and heat gently until it melts. Add the apple wedges and cook until they begin to soften and take on a little colour.

7.  To make the dressing, put all the remaining ingredients into a jam jar and shake to combine.

7.  To serve. Place a tart in the centre of each plate. Arrange the apple wedges around the tart and spoon around the dressing. Garnish the tart with some torn basil leaves.

Three Cheese, Onion and Potato Pie


Three Cheese, Onion & Potato Pie
This stunning vegetarian pie is perfect for a mid-week meal and tastes absolutely scrumptious, pure comfort food at its best!

Serves 4-6
Prep time:   20-30 minutes
Cooking time: 1 hour 15 minutes

Ingredients
30g/1oz butter
280g/10oz onions, peeled, thinly sliced
1 tsp salt
2 tbsp caster sugar
930g/2lb 1oz potatoes, peeled, thinly sliced
140g/5oz crème fraîche
4 tbsp double cream
100g/3½oz mature cheddar, grated
100g/3½oz Stilton, crumbled
100g/3½oz Gruyère, grated
freshly ground black pepper
1 tsp grated nutmeg
500g/20 oz pre-prepared puff pastry
1 free-range egg, beaten, to glaze

Method

1.   In a large frying pan heat the butter and add the onions, salt and sugar, fry for 5-6 minutes until the onions begin to caramelize.  Remove from the pan and set aside.

2.  Meanwhile, cook the potatoes in a large pan of salted boiling water for 8 minutes, drain and then set aside.

3.  Preheat the oven to 220°C/425°F/Gas Mark 7.

4.  Mix the crème fraîche, cream and cheddar in a small bowl. Mix together the Stilton and Gruyère in a separate bowl.

5.  Layer one quarter of the potatoes, a third of the onions and a third of the Stilton/Gruyère mixture in the bottom of a large pie dish. Sprinkle with a little freshly ground black pepper and grated nutmeg.

6.  Repeat, working from the outside of the pie dish into the middle to achieve a domed effect, seasoning as you go, then pour over half the cream/cheddar mixture. Repeat this step then cover the filling with the remaining potato, ensuring none of the cream mixture is visible.

7.  Roll out the pastry so it is larger than the pie dish.  Cut strips from the side of the pastry.  Brush the rim of the pie dish with egg wash and place the strips around the rim of the pie dish and cover with egg wash.  Cover the pie with the pastry, using a folk press the edges of the pie.  Use any off-cuts of pastry to decorate the pie then brush the top with the remaining egg wash. Cut a small cross in the top of the pie to let the steam escape.

8.  Place the pie in the oven and cook for 30 minutes then reduce the oven to 180°C/350°F/Gas 4 and bake the pie for another 30 minutes or until golden-brown, enjoy!

Blue Cheese and Caramelised Onion Tarts
This is a wonderful starter which can prepare in advance.  Use your favourite creamy blue cheese to create this delicious dish.

Makes 4 Individual Tarts
Prep time:   15-20 minutes
Cooking time: 35 minutes

Ingredients
500g/1lb 2 oz ready-made short-crust pastry
250g/9 oz soft blue cheese, rind removed
90g/ 3 ¼ oz mascarpone cheese
2 large eggs, yolks only
1 sprig of thyme, leaves removed
175g/6oz caramelised onion relish/chutney
Freshly ground salt & pepper

For the Dressing
90g/3 ¼ oz sundried tomatoes from a jar, finely chopped
1 tbsp olive from the jar of sundried tomatoes
2 tbsp good quality balsamic vinegar
2 tbsp extra virgin olive oil
1 small garlic clove, peeled & crushed
1 small shallot, peeled & finely chopped

To serve
Salad leaves


Method

1.  Roll out the ready-made pastry and cut out 4 rounds 13cm/5in in diameter.  Use to line 4 individual tartlets about 10cm/4inches or a Yorkshire pudding/muffin tin.  Prick the base all over with a folk and place in the refrigerator for 20 minutes to let the pastry rest.

2.  Preheat the oven to 200°C/400°F/gas mark 6.

3.  For the best results blind bake the tartlets first.  Line the pastry case with foil and add the baking beans.  Place on a baking tray and place in the oven for 12-15 minutes, remove the foil and beans and bake for a further 5 minutes.

4.  In the meantime mix the blue cheese and mascarpone cheese with the egg yolks and thyme and then season to taste (be careful with the salt).

5.  Remove the tarts from the oven and reduce the heat to 180°C/350°F/gas mark 4.  Spoon 1 tbsp of caramelised onion into each tartlet and top with the cheese mixture.  Place in the oven for 15 minutes until the filling is set.

6.  In the meantime make the dressing, mix all the dressing ingredients together and season to taste.

7.  To serve, place the tarts on serving plates with salad leaves and drizzle with the dressing around each tart, enjoy!

Blue Cheese Macaroni


Blue Cheese Macaroni
Comfort food at its best!  A perfect mid-week meal for a chilly evening!

Serves 2
Prep time:  5-10 minutes
Cooking time: 15 minutes

Ingredients
250g/8 ½ oz macaroni
20g/ ½ oz butter
1 bunch of spring onions, thinly sliced
1 sprig of thyme
20g/ ½ oz plain flour
200ml/6 ½ fl oz white wine
125ml/4 fl oz double cream
150g/5 oz blue cheese (use your favourite)
Freshly ground salt & pepper
2 large handfuls of baby spinach leaves
Olive oil, for drizzling

Method

1.  Cook the macaroni as per packet instructions.

2.  Whilst the pasta is cooking melt the butter in a pan and stir in the spring onions and thyme.  Cook for 2-3 minutes until the onions are tender then add the flour, stir continuously for one minute.

3.  Slowly add the wine to the pan, stir continuously.  Add the cream and bring to a simmer, cook for 5 minutes until thickened and remove the thyme.

4.  Slice the cheese and add half to the sauce.  Season to taste and heat until the cheese has melted.

5.  Drain the macaroni and add to the sauce, stir the spinach into the pasta and then divide into individual dishes or a large dish to share.

6.  Lay the remaining cheese over the pasta, season with pepper and a drizzling of olive oil and place under a very hot grill.  Cook for about 5 minutes until the top is golden and bubbling, enjoy!

The Best Cheese Scones


The BEST Cheese Scones

These have to be the best cheese scones I have ever tasted.  The perfect savoury scone - best eaten warm spread with lots of butter!

Makes 8-10
Prep time:  15 minutes
Cooking time: 12-15 minutes

Ingredients
225g/8 oz self raising flour
1 ½ tsp baking powder
1 tsp mustard powder
½ tsp cayenne pepper
50g/2 oz butter, cut into cubes
100g/3 ½ oz mature cheddar cheese
150 ml/ ¼ pint milk
1 egg, beaten

Method

 1.  Preheat the oven to 220C/425F/Gas 7 and lightly grease a baking sheet.

2.  Sieve the flour and other dry ingredients into a large mixing bowl and then rub in the butter.

3.  Stir in the cheese, then a milk and egg to get a soft dough.

4.  Turn on to a floured work surface and knead very lightly. Pat out to a round 2cm/¾in thick. Use a 5cm/2in cutter to stamp out rounds and place on the baking sheet. Lightly knead together the rest of the dough and stamp out more scones to use it all up.

5.  Brush the tops of the scones with a little milk. Bake for 12-15 minutes until well risen and golden. Cool on a wire rack.

Goat's Cheese, Potato and Thyme Tart


Goat’s Cheese, Potato & Thyme Tart
This tart explodes with flavours from the sweetness of the goat’s cheese to the earthy taste of thyme... what a wonderful combination.  Serve warm or cold with a crisp green salad.

Serves 6
Prep time: 20 minutes
Cooking time: 50-60 minutes

Ingredients
250g shortcrust pastry
25g butter
1 tbsp olive oil
2 onions, sliced
1 potato, peeled and sliced
2 garlic cloves, crushed
2 tbsp fresh thyme leaves
200g goat’s cheese, broken into pieces
3 eggs
200g crème fraiche
Salad to serve

Method

1.  Preheat the oven to 190°C/380°F/Gas mark 5.

2.  Roll out the pastry to fit a 23cm deep loose tart tin then line with the pastry.  Line the pastry with greaseproof paper and fill with baking beans or rice and bake in the oven for 15 minutes.  Remove the paper and beans and cook for a further 5 minutes until golden and set aside.

3.  Heat the butter and oil in a large frying pan or wok and add the potatoes and onions and cook over a low heat for 15 minutes until tender and golden.  Season and add the garlic and thyme and cook for another 3 minutes.  Place the contents into the pastry case with the goats cheese and cover evenly.

4.  Whisk the eggs with the crème fraiche and pour into the pastry case, bake for 30-35 minutes until set and golden.  Serve warm or cold with green salad leaves.

Salmon & Blue Cheese Rigatoni

Salmon & Blue Cheese Rigatoni
A delicious pasta dish which is quick and easy to make, the salmon and blue cheese make a wonderful combination.

Serves 4
Prep time: 10-15 minutes
Cooking time: 25 minutes
Ingredients
500g boneless, skinless salmon fillet
600ml vegetable stock
2 tbsp olive oil
1 large onion, peeled and finely chopped
4 shallots, peeled and finely chopped
2 x 400g tins of chopped tomatoes
1 tsp caster sugar
2 sprigs of thyme, leaves picked
2 garlic cloves, finely chopped
Drizzle of balsamic vinegar
500g rigatoni pasta
250g soft blue cheese (eg. Dolcelatte)
Salt & freshly ground pepper
50g baby spinach leaves
15g basil leaves, torn
4 tbsp double cream

Method

1.  Poach the salmon in gently simmering vegetable stock for 4 minutes, or until cooked through.  Drain and set aside.

2.  For the sauce heat the olive oil in a large pan or wok and add the onions and shallots, cook until soft.  Add the tomatoes, garlic, sugar and thyme and simmer for 20 minutes.  Add a drizzle of balsamic vinegar.

3.  Cook the pasta as per packet instructions, leaving some of the water to keep the pasta moist.

4.  Add the cheese to the sauce and flake in the salmon – season to taste.

5.  Add the pasta, spinach & basil to the sauce and gently fold together.  Then stir in the cream, gently heat, season to taste.  Serve immediately. 

Cooks tips
v If you don’t like salmon you can use chicken or a different oily fish.

Spicy Paremsan Crisps

Spicy Parmesan Crisps
This has to be one of the easiest recipes around, not even sure I should call it a recipe... but, they taste sooo good!!  They are brilliant to have for pre-dinner nibbles or with a nice chilled glass of wine or beer!

Makes 24
Prep time: 5 minutes
Cooking time: 5-7 minutes
Ingredients
100g parmesan cheese, finely grated
20g jalapeño peppers, red, green or both (from a jar)

Method

1.  Preheat the oven to 200°C/fan 180°C/Gas mark 6.

2.  Finely chop the jalapeno peppers and dry with kitchen paper, mix the peppers with the parmesan.

3.  Cover 2 baking trays with parchment paper and with a teaspoon place the parmesan mixture onto the baking tray leaving a 3cm gap between each spoonful.

4.  Place in the oven for 5-7 minutes until the crisps begin to turn golden and are bubbling.  Leave to cool then peel off from the parchment paper and store in an airtight container until ready to serve.


Cooks Tips

v  Experiment with different toppings, replace the jalapenos with smoked paprika or finely chopped roasted peanuts.
