Loaded Baked Potato Rounds

I've saw the recipe for these potatoes on allrecipes.com and changed it up slightly.  We served these potatoes with BBQ ribs on the grill and everyone loved them.  Taste like potato skins but so much easier to make.  I will be making these again soon!


Yukon Gold Potatoes, cut into slices ( use one medium size potato per person)
Melted Butter
Salt and Pepper
Garlic Powder
Bacon, cooked and crumbled (slice of bacon per person)
Shredded Sharp Cheddar  Cheese
Chopped Green Onions
sour cream

Preheat oven to 400 degrees.
Brush both side of potato slices with butter, (lightly) sprinkle on salt, pepper and garlic powder.   Place them on a parchment lined baking sheet. Ingredients:
- 4 pieces or 5 lbs. of skinless chicken breast fillet
- garlic powder
- flour
- 2 eggs
- Japanese breadcrumbs
- oil for frying
- salt and pepper

For the Yasai Itame:
1 sliced medium onion
1 red bell pepper cut into strips
100 grams beansprouts
500 grams Julienned carrots
1 tbsp soy sauce or Worcestershire sauce
salt and pepper to taste
2 tablespoons oil

Cooking Directions:

1. For the Chicken:
- Lightly pound the chicken breast fillet with a mallet to flatten. Cover the chicken with a plastic wrap while you pound the chicken. Flatten to about 4 x 3 inches.
- Season the chicken on both sides with garlic powder, salt and pepper.
- Beat 2 eggs in a bowl. Prepare the flour in a separate container. Prepare breadcrumbs in a separate container as well.

- Using a kitchen thong, coat each piece of flattened chicken with flour, dip in eggs, and coat again with breadcrumbs. Make sure that the chicken is fully coated with the breadcrumbs.
- In a frying pan, heat oil and fry each piece of chicken in medium heat until golden brown.

2. For the Yasai Itame:
- In a separate pan, heat 2 tablespoons of oil. Combine all ingredients and stir-fry until ingredients are soft and tender. Add salt and pepper to taste.

Finishing Touches: Using a knife, cut the chicken into strips. Serve with steaming hot rice, Yasai Itame, and add store-brought Tonkatsu Sauce or ketchup for some flavoring.

If you prefer other meat like pork or beef, you can simply replace the chicken with the meat of your choice and follow the same steps. Fish is also a healthier choice.

This recipe will only take a couple of minutes of your time and will be even more enjoyable when you include your kids in the preparation. They can help in coating the chicken, setting the table, and mixing some orange juice, iced tea or lemonade that will go well with this meal. Chocolate Beetroot Cake with Candied Beetroot


Chocolate Beetroot Cake with Candied Beetroot
Chocolate & Beetroot is a wonderful combination! The beetroot gives the cake a lovely sweet stickiness as well as plenty of vibrant colour!

Makes 16 slices
Preparation time:  30 minutes
Cooking time:  2 hours

Ingredients
For the cake:
250g chocolate, chopped (minimum 60-70% cocoa solids)
3 eggs
250g light muscovado sugar
4 tbsp clear honey
½ tsp vanilla extract
80g plain flour
50g ground almonds
1 tsp baking powder
¼ tsp salt
25g cocoa powder
250g raw beetroot, washed, trimmed & finely chopped
50ml strong black coffee
30ml sunflower oil
1 tbsp Chambord
1 tbsp red food colouring

For the chocolate icing:
150g chocolate (minimum 60-70% cocoa solids), chopped
3 tbsp strong black coffee
1 tsp vanilla extract
3 tbsp clear honey

For the candied Beetroot decoration;
100g granulated sugar, plus 2 tbsp for coating
100ml water
100g raw beetroot, peeled & grated

Preparation method
1.    Preheat the oven to 170ºC/150°C Fan/335ºF/Gas Mark 3 and line a 20cm cake tin with baking parchment.
2.    In a bowl melt the chocolate over a pan of simmering water, make sure the bowl does not touch the water.  Remove from the heat and set aside to cool.
3.    In a large bowl beat the eggs, sugar, honey and vanilla extract using a wooden spoon or electric whisk until light and fluffy.  Fold through the flour, ground almonds, baking powder, salt and cocoa until thoroughly combined.  Stir in the melted chocolate, beetroot, coffee, sunflower oil, Chambord and red colouring.
4.    Pour the cake mixture into the cake tin and bake in the oven for 1 ½ hours, cover the cake with foil and bake for a further 30 minutes.
5.    Remove the cake tin from the oven and set aside until cooled slightly and turn out onto a wired rack to cool.
6.    For the chocolate icing, melt the chocolate, coffee, vanilla extract and honey in a bowl over a pan of simmering water, stirring until fully combined and melted.  (Make sure that the bowl does not touch the water).  Remove from the heat and leave to cool and thicken.
7.    In a separate bowl beat the butter until soft and then gradually beat in the icing sugar.  Now add the vanilla extract and fold in the melted chocolate until smooth (add a drizzle of milk if the mixture is too stiff).
8.    For the Candied Beetroot decoration, place the sugar and water in a pan and bring to the boil, stir to dissolve the sugar.  Add the beetroot and cook for 10-15 minutes or until the beetroot softens then drain and leave to cool slightly.  Coat with the extra sugar and set aside.
9.    To assemble the cake, spoon the icing on the top of the cake easing it down over the sides to cover the whole cake.  Arrange the candied beetroot on the top of the cake to decorate. Enjoy!

Ingredients:

Directions:

1. Cook lasagna noodles al dente, drain and set aside.

2. Pre-heat oven to 350 degrees.

3. Dry the spinach as much as possible and set aside. Place the tofu, sugar, soymilk, garlic powder, lemon juice, basil and salt in a blender and mix till smooth.

4. Cover the bottom of a lasagna baking dish with a thin layer of sauce, followed by a layer of lasagna noodles. Add a layer of half the tofu and half the spinach. Continue the same way, using half the tomato sauce and noodles and the rest of the tofu mixture and spinach. The last layer should be the remaining noodles covered by the remaining tomato sauce.

5. Bake for 25 to 30 minutes till the tomato sauce bubbles.

Lasagna With Pumpking And Three Cheese

Ingredients:

* 1/2 pound sliced mushrooms
* 1 chopped onion
* Salt to taste

* 2 teaspoons olive oil
* 1 can of pumpkin
* ? cup of cream
* 1 teaspoon dried sage leaves
* Pepper to taste
* 9 no-cook lasagna noodles
* 1 cup ricotta cheese
* 1 cup shredded mozzarella cheese
* ? cup shredded Parmesan cheese

Directions:
1. Pre-heat oven to 375 degrees.

2. Slightly oil a lasagna baking dish.

3. Saut? the mushrooms, onion and salt in olive oil until soft and set aside.

4. In a dish, mix the pumpkin, cream, sage, pepper and salt.

5. Spread ? cup of pumpkin sauce in the lasagna baking dish. Add three noodles and place another layer of the pumpkin sauce on top. Now add half of the mushroom and onion mixture, half of the ricotta cheese, half of the mozzarella cheese and about a third of the Parmesan cheese. Repeat the layers once more. Top off the lasagna with remaining noodles and sauce. You should have a third of the Parmesan cheese remaining.

6. Cover the lasagna with foil and bake for 45 minutes.

7. Uncover and sprinkle with the remaining Parmesan cheese.

8. Bake again, uncovered, for another 10 minutes.

9. Let your lasagna cool for 10 minutes before serving!

Yummy Turkey Lasagna

Ingredients:
* ? pound Minced turkey
* 12 ounce can of spaghetti sauce
* 15 ounces ricotta cheese
* 8 ounces shredded Mozzarella
* 1 ounce Parmesan
* 6 uncooked lasagna noodles
* ? cup of water
* Grated Parmesan garnish

Directions:

1. Cook the turkey thoroughly till all the pinkness goes away in a skilled over a medium flame. Take all the fat off.

2. Carefully add in spaghetti sauce, stirring continuously. Make sure it's heated through.

3. Meanwhile, in a separate bowl, mix the ricotta, Mozzarella and Parmesan cheese thoroughly till it's all combined.

4. In a lasagna baking dish, spread around 1 ? cups of sauce you've made with turkey and tomato sauce. Add 3 lasagna noodles on top and top it with ? the cheese mixture. Repeat layers one more time. Put all the remaining turkey sauce on top.

5. Slowly pour water around edges of lasagna baking dish from the inside. Cover very well using foil.

6. Bake at 375 degrees for 45 minutes. Remove foil and bake 10 minutes more.

7. Let the lasagna cool for 10 minutes before serving and garnish with grated parmesan.

2. Cook lasagna noodles in boiling salted water till al dente. Drain, cool by running cold water and then pat dry.

3. In a separate bowl, mix a little cold water into the flour. Combine into a smooth paste.

4. Heat the chicken broth and milk in a pan. Add flour paste to the liquid; seasoning with salt and pepper. Slowly add in parsley. Keep stirring and cooking till the mixture thickens and boils.

5. Pour a thin layer of tomato mixture into a lasagna baking dish. Top with a layer of lasagna noodles and add a layer of chicken; sprinkling some mozzarella on top. Add a layer of chicken broth white sauce, topping with another layer of lasagna, more tomato sauce, another layer of chicken, mozzarella cheese, and white sauce. Repeat till the last layer is remaining lasagna noodles.

6. Garnish lasagna with the grated Parmesan. Bake chicken lasagna at 375? for around 30 minutes till brown.

Directions:

1. To start making the lasagna recipe, preheat your oven to 375 degrees.

* 1 egg

* ? pound lean minced chicken
* ? package defrosted chopped spinach
* ? finely chopped onion
* ? pound sliced mushrooms

Delicious Asparagus Penne



It's Spring, well, so they say as the weather so far hasn't been the best but Spring means asparagus is in season.  I love asparagus!  I found this recipe in the "Rachel Ray's Big Orange Book". It makes a great side dish when serving fish.   The recipe serves 6-8 but is easily halved.  Taste like Spring!



  • salt (for pasta water)
  • 1 lb thin asparagus, trimmed of ends
  • 1 lb  penne
  • 1 teaspoon extra virgin olive oil
  • 1 tablespoon butter
  • 2 large garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 3/4 cup vegetable stock (or chicken broth)
  • 3/4 cup half-and-half
  • 2 tablespoons Dijon mustard
  • 2 teaspoons grated lemon zest
  • salt & black pepper
  • 2 tablespoons fresh tarragon, finely chopped, a couple of sprigs (or use 2 teaspoon dried tarragon)
  • 1 lemon, juice of
  • grated parmigiano-reggiano cheese
  1. Bring a large pot of water to a boil. Salt the water. Drop the asparagus in for 3-4 minutes, then remove, drain, and chop into 2-inch pieces. Add the pasta to the water and cook to al dente.
  2. To a skillet placed over medium heat, add the EVOO and butter. When the butter melts into the oil, add the garlic and gently cook for 2 to 3 minutes, then sprinkle the flour into the pan and cook for 1 minute, stirring. Whisk in the stock, half and half, mustard, and lemon zest. Season the sauce with salt, pepper, and tarragon, and cook for 2 to 3 minutes to thicken. Add the lemon juice, and gently toss the asparagus and pasta with the sauce to coat. Turn off the heat and adjust the salt and pepper to taste, then top with grated cheese and serve.  Serves 6-8

5. Once it's mixed well, add the chicken stock, vinegar and Worcestershire sauce. Let it simmer and cook for 1 hour.

6. Put the pasta bucatini in a bowl and add the sauce you just made for the pasta recipe.

7. Add the Parmigiano-Reggiano and serve it hot!

Ingredients:

* ? cup dried chickpeas
* 2 ? garlic cloves (Chop 1 ? , keep remaining 1 whole)
* ? large cinnamon stick, broken
* 1 tablespoon olive oil
* 1 ? pounds of cubed lamb shoulder
* Kosher salt
* Ground black pepper

4. Keep the lamb aside in a bowl for a later part of the recipe. Add onion to pot, reduce the flame and add salt and pepper. Keep stirring and saut? until its soft and just starting to brown. Add the chopped garlic, Ras-el-Hanout and ginger and stir for another minute.

5. Add in the tomatoes and lamb and bring it to a boil again. Slowly pour in the chicken stock and keep boiling.

6. Reduce the flame to and cover, leaving a small opening. Let it simmer and keep stirring occasionally, until lamb is tender and well cooked. This can take some time.

7. Add in the chickpeas and simmer till heated thoroughly. Add the apricots and simmer some more. Add salt and pepper according to taste. Your lamb tagine recipe is done!

8. Serve couscous on a large plate making a hole in the middle. Put the tagine in the centre and sprinkle cilantro all over.

How To Make Pasta Right From The Beginning (rajiv tiwari)

Making a traditional Italian pasta recipe can seem to be quite a challenging task. Knowing how to make pasta however isn't that hard at all! The best part about this pasta recipe is that you can team it up with any sauce of your choice and enjoy!

Ingredients:

* 400 grams of flour
* 4 eggs

Directions:

1. Sift the flour into a smooth, separated consistency for the pasta recipe.

2. Pour the flour in a pile and create a hole in the middle. Break the eggs and pour them in the middle.

3. Beat the eggs and the flour and keep adding more and more flour, slowly from around the mixture that you have.

4. Do this until you have smooth dough for the pasta recipe and you can add a few drops white wine for extra flavour if need be.

5. Once you have mixed the flour and egg, use your hands to knead the dough for around 15 minutes till it is smooth and elastic.

Authentic Italian Lasagna Recipe That'll Always Leave You Craving For More (rajiv tiwari)

Cooking authentic Italian Lasagna recipes has become quite rare. Lasagna, being quite a versatile dish, translates into everybody experimenting with the Italian cuisine. While lasagna experimentation usually works out well, it's a good idea to know how to make traditional Italian lasagna as well.

Ingredients:

* ? pound sweet Italian sausage
* ? pound lean ground chicken
* ? cup minced onion
* 1 crushed clove of garlic
* 1 can of tomato paste
* 1 can of tomato sauce
* ? cup water
* 1 tablespoon sugar
* ? teaspoon dry basil
* ? teaspoon fennel seeds
* ? teaspoon Italian seasoning
* ? tablespoon salt
* Pinch of ground black pepper
* 2 tablespoon chopped parsley
* 6 lasagna noodles
* 8 ounces ricotta cheese
* ? egg
* ? teaspoon salt
* ? pound sliced mozzarella cheese
* ? cup grated Parmesan cheese

Directions:

1. Cook the sausage, ground beef, onion, and garlic over medium heat until it's completely browned.

2. Add the crushed tomatoes, tomato paste, tomato sauce and water.

3. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Stir well until it's mixed thoroughly. Now simmer the mixture after covering for an hour. Stir occasionally.


4. Cook the lasagna in boiling water till al dente. Drain the cooked lasagna and rinse with cold water.

5. Mix the ricotta cheese with an egg, remaining parsley, and salt in a separate bowl.

6. Preheat oven to 375 degrees F (190 degrees C).

7. In a baking dish spread some of the meat sauce at the bottom of a baking dish. Arrange 3 lasagna noodles lengthwise over meat sauce. Spread a half of the ricotta cheese mixture on top of the lasagna noodles and a third of mozzarella cheese slices. Spoon some more meat sauce over the mozzarella layer and put some of the Parmesan cheese on top.

8. Repeat the layering and top with remaining mozzarella and Parmesan cheese.

9. Cover it with foil, but make sure the foil and cheese aren't touching.

10. Bake in preheated oven for 25 minutes. Remove the foil and bake for 25 more minutes.

11. Cool for 15 minutes before serving.

Crunchy Raspberry Ripple Terrine


Crunchy Raspberry Ripple Terrine

A delicious dessert with the wow factor!  Even better you can prepare this in advance and it will keep in the freezer for up to a month.
Serves 8
Preparation time:  25 minutes, plus freezing time
Cooking time: No cooking

Ingredients
350g raspberries
3 free-range eggs
100g golden caster sugar
300ml double cream
2 meringue shells, crushed into small pieces


Preparation method

1.  Line a 1 litre loaf tin with cling film.

2.  Mash 150g of the raspberries and pass through a sieve, discard the seeds and set aside. 

3.  Place a large bowl over a pan of simmering water, whisk the eggs and sugar continuously until it has doubled in volume and thick.  Remove the bowl from the heat and continue to whisk until it has completely cooled.  The whole process should take about 10 minutes.

4.  In another bowl whisk the cream until it has thickened and then fold the egg mixture until fully combined; now fold through the meringue pieces.

5.  Pour the raspberry puree over the mix in a zigzag; gently pour into the lined loaf tin.  Freeze for a minimum of 4 hours.

6.  Serve the terrine in slices with the remaining whole raspberries, enjoy!

Shrimp with Roasted Peppers and Spinach

 Garlicky shrimp, buschetta topping, and spinach 
tossed with pasta is delicious and ready in 
the time it takes to boil the pasta.
This recipe uses ingredients I usually have on 
hand for that 'what's for dinner tonight?' 
moment. Especially if you don't want to go out.
I always keep a bag of shrimp in the freezer
 for quick dinners like this one. 
Extra fast when you use a jar of bruschetta topping.
 Mince the garlic and saute in oil for 2 minutes. 
Measure out the remaining ingredients 
so that you can quickly add as needed:
a cup with all the seasonings, 1/2C bruschetta,
 1/2C broth, 1/2C cheese, 3T butter.
 Add the shrimp, peppers, salt, pepper, red pepper 
flakes and saute for 1 minute, then stir in the broth
 and cook for 2-3 minutes until the shrimp are 
just turning opaque. Don't overcook at this point.
 Reduce heat to low and stir in the cheese, then
 Stir in the spinach, pasta and butter.
Toss until the spinach wilts and the 
butter and cheese melt.
A delicious dinner in under 20 minutes.

Shrimp with Roasted Peppers and Spinach

12 oz L or XL shrimp, peeled and thawed if frozen
2T olive oil
3 cloves, minced
1/2C sweet pepper bruschetta topping
1/2t kosher salt
1/2t pepper
1/4t red pepper flakes, crushed
1/2C chicken broth
1/2C shredded Parmesan cheese
3T butter
4C fresh baby spinach (6 oz bag)
8 oz linguini pasta (or thin spaghetti),
   cooked and drained

1. Heat a large saute pan on medium for
     1-2 minutes.
2. Add olive oil and garlic; cook 2-3inminutes
     until fragrant.
3. Add bruschetta topping, shrimp, salt, pepper,
     red pepper flakes and stir 1 minute.
4. Add broth and cook 2-3 minutes until slightly
     reduced and the shrimp have just turned
     opaque.
5. Reduce heat to low and stir in the butter,
     spinach, cheese, and pasta.
6. Toss until butter and cheese melts and the
     spinach wilts. Serve.

*L raw shrimp comes in a 12 oz bag in the freezer
  just rinse under cold water and peel. Thaws in minutes.
*if bruschetta topping isn't available, finely chop
  1/2C roasted red pepper
