Prawn Linguine

Prawn Linguine
A very quick & easy supper dish that is also delicious and fresh!

Serves 2
Prep time:  5 minutes
Cooking time:  8 minutes

Ingredients
200g linguine
2 tbsp olive oil
2 garlic cloves, finely chopped
1 fresh red chilli, de-seeded & finely chopped
12 cherry tomatoes
200g raw king prawns
½ fresh lemon, zest & juice
Small handful of fresh basil leaves

Preparation method

1.  Cook the linguine as per packet instructions.

2.  In a large frying pan heat the olive oil, add the garlic and chilli and gently fry on a low heat for 1 minute.  Now add the cherry tomatoes and cook for 3-4 minutes.

3.  Add the raw prawns and cook until pink then add the cooked linguine to the large frying pan with the lemon zest and juice stir through with the basil leaves.

4.  Serve immediately, enjoy!

Easy Sausage Alfredo

Here's a tasty dinner you can have on 
the table in 15 minutes. That's a good 
thing to have in your recipe file.
Hillshire Farm® Sausage Alfredo

Ingredients:
1 pkg. Hillshire Farm® Smoked Sausage
diagonally cut into 1/4” slices
8-12 oz. pasta, cooked, drained
2 cups heavy cream
2 teaspoons Cajun seasoning
1/2 cup grated Parmesan cheese

Directions:
1. PREPARE pasta according to 
directions; drain and set aside.

2. SAUTE sausage in a large skillet over 
medium-high heat for 5 minutes, turning occasionally.

3. ADD cream and Cajun seasoning; bring to a 
boil. Reduce heat; simmer gently for 3-4 
minutes or until mixture begins to thicken. 
Remove from heat; stir in Parmesan cheese. 
Add pasta to the sauce.
STIR to combine.
I cut the recipe in half. Next time I'll make the 
whole recipe and have a little leftovers for
 lunch the next day. 

Tip:  For added fresh flavor, add 1 cup frozen green peas or broccoli in last 3-4 minutes of cooking pasta.  Continue as directed. Can also stir in chopped green onions and tomatoes before serving and sprinkle it all with fresh chopped parsley. Whatever you want.  Or just serve a green vegetable or salad on the side.

A Chocolate Soufflé Pasta Recipe Makes The Best Dessert (rajiv tiwari)

Souffl?s are one of the most elegant and delicious desserts any of us can enjoy. Light and yet extremely tasty, they can be perfect for almost every occasion. Enjoy making this recipe in your home without having to travel to expensive restaurants! A delicious dessert recipe that's homemade!

Ingredients:

* 25 grams of unsalted butter
* Finely grated chocolate
* 2 tablespoons of plain flour
* 2 teaspoons of caster sugar
* ? teaspoon of corn flour
* 1 medium egg yolk
* 1 medium whole egg
* 6 medium egg whites
* 4 tablespoons of milk
* 1 tablespoon of double cream
* 75 grams of dark chocolate, broken
* 1 tablespoon of cocoa powder
* 85 grams of caster sugar
* 1 tablespoon of cocoa

Directions:

1. Start the recipe by brushing 4 souffl? bowls generously with the butter.

2. Add in the grated chocolate into each dish and spread it evenly around the bowls for a tasty recipe taste.

3. In a separate bowl mix the flour, sugar and corn flour.

4. Whisk the egg yolk and whole egg into a bowl and carefully beat in the flour mixture slowly to mix well for the recipe.

5. Pour in the milk and cream into a pot and boil. Remove it from the flame and blend in the chocolate until it mixes completely.

6. Add the hot chocolate to the egg and flour mixture and combine thoroughly. Add it back to the pot and cook for around 5 minutes to ensure you get a consistent recipe. Remove from the flame and cool, beating occasionally.

7. Warm the cream in a pan stopping just before it boils. Take it off the flame and add cocoa carefully, constantly beating the recipe. Cool.

8. Preheat the oven to 170? C. Beat the egg whites and add in the sugar. Beat the recipe well.

9. Combine both the mixtures you've made and whisk in egg white little by little to make the recipe light.

10. Slowly pour in the recipe into all 4 bowls equally, making sure there's no voids.

11. Sprinkle a little grated dark chocolate in the middle of the souffl?. Make sure the top is level and will not spill and burn.

12. Bake the souffl? recipes for 15 minutes.

13. The souffl? recipes should rise a lot more than half, without getting burnt.

14. Serve the souffl? recipes with ice cream if you want.

A Basic Pasta Recipe - The Best Macaroni And Cheese (rajiv tiwari)

Ingredients:

* 1 ? cups cubed peeled butternut squash
* ? cups low sodium chicken broth
* ? cups fat-free milk
* 1 garlic cloves, peeled
* 1 tablespoons plain, flavourless yogurt
* Salt to taste
* Freshly ground black pepper to taste
* ? cups Gruy?re cheese, shredded
* ? cup pecorino Romano cheese, grated
* 4 tablespoons fresh Parmigiano-Reggiano cheese, finely grated
* ? pound uncooked Cavatappi
* Cooking spray oil
* ? teaspoon olive oil
* ? cup breadcrumbs
* 1 tablespoon fresh parsley, finely chopped

Directions:

1. Start your pasta recipe by preheating your oven to 190? C.

2. Mix the squash, broth, milk, and garlic in a medium saucepan and stir well.

3. Bring the mixture to a boil over a high flame for the sauce of the pasta recipe. As soon as the sauce starts boiling, reduce the flame to a medium and continue cooking on a simmer till squash is tender and cooked when pierced. Remove the pan from the flame and keep it aside for the pasta recipe.

4. Add the squash mixture you've made to a blender or food processor.

5. Season the mixture with salt and pepper according to your taste and add yogurt. Put the the lid on the blender, leaving the centre piece off as the mixture is hot. Put a clean kitchen towel over opening and blend the sauce for the pasta recipe until you have a smooth consistency.


6. Add the sauce to a bowl and carefully stir in Gruy?re, pecorino Romano and 1 tablespoon of Parmigiano-Reggiano. Stir very well till it's combined for the pasta recipe.

7. Bring a large pot of water to boil and salt it generously. Cook the pasta in it till al dente mentioned on the package.

8. Add pasta to the sauce you've made and stir very well until mixed thoroughly for a perfect pasta recipe.

9. Spread mixture evenly into a baking dish that you've coated with cooking spray.

10. Heat the olive oil in a medium pan and keep it over a medium flame. Add in the breadcrumbs and cook the mixture until it's a nice golden brown. Remove from the flame and stir in remaining Parmigiano-Reggiano cheese to add a nice flavour to the pasta recipe. Sprinkle this mixture evenly over the hot pasta mixture. Add a light layer of cooking spray on top as well.

11. Bake at 190? C for until the pasta recipe is nice and bubble.

12. Garnish with parsley and serve your pasta recipe when hot for the tastiest experience!

An Angel Hair Pasta Recipe That Will Make Your Mouth Water (rajiv tiwari)

Ingredients:

* ? pound of angel hair pasta
* 6 ounces fresh asparagus, rinsed and sliced
* 2 extra-large, free-range eggs
* 2 ounces of bacon, diced
* 2 cloves of garlic, minced finely
* ? cup heavy cream
* ? large handful Italian parsley, finely chopped
* Salt to taste
* Pepper to taste
* Shaved Parmesan cheese

Directions

1. Start off your pasta recipe by adding salt to nice, large pot of water and bring it to a boil.

2. On another medium flame, put a large non-stick skillet. Add in the bacon and cook for about for around 4-5 minutes till it's nice and crispy for your pasta recipe.

3. Carefully add in garlic and cook for a little longer minute more.

4. Remove bacon and garlic from the pan with and drain off some fat if required, keeping about 1 tablespoon aside for later in the pasta recipe.

5. Crack the egg into the pan and fry in the bacon fat, sunny side up.

6. Remove to a plate when the egg is firm throughout, but the yolk is still runny, which should take 2-3 minutes. Make sure it's done just right for the pasta recipe. Cover it loosely with foil to keep warm. Take the pan off the heat but do not clean the bacon fat off it.


7. When the water boils, add the asparagus and pasta and cook well till al dente as the package says. Make sure your pasta cooks well but doesn't overcook or your pasta recipe won't taste nearly as good.

8. Drain the pasta and asparagus, reserving 1 cup of cooking liquid for later in the pasta recipe.

9. Put the pan back on to a medium flame.

10. Once hot, pour in the cream and bring it to a simmer. Make sure your scrape up all the remaining brown bits off the pan.

11. Throw in the drained pasta and asparagus and slowly pour in the reserved cooking liquid and toss well to coat the pasta recipe evenly.

12. Add in the bacon mixture and season with salt and pepper according to your taste.

13. Toss and mix well. Serve generously on two plates and top with shaved parmesan cheese and reserved fried egg.

14. Serve the pasta recipe when hot to enjoy it the best.

6. Wait for the onion to get cooked completely for the pasta recipe and add in the broth, ham, and pea.

8. Reduce the flame of the sauce way to low while you drain the pasta.

How To Make Pasta With Lemon And Broccoli (rajiv tiwari)

Ingredients:

* 6 ounces dried pasta shapes in variety, such as fusilli, penne, shell, etc.
* 2 small, boneless chicken breasts
* Salt to taste
* Freshly ground pepper
* 2 tablespoons butter
* 1 tablespoon olive oil
* 1 ? cloves garlic, smashed through a garlic press
* ? large or 1 small bunch broccoli, stems and florets cut into small pieces
* ? cup chicken broth
* Juice of ? lemon
* Zest of ? lemon
* ? cup walnuts, chopped and toasted at 180? C for 2-4 minutes
* ? cup freshly grated parmesan cheese, plus extra for serving

Directions:

1. Start your pasta recipe by bringing a large pot of water to a boil and salting it generously. Cook the pasta till al dente to have pasta noodles of a perfect consistency. Drain it and put it to the pot, adding 1 ? tablespoons of butter on top.

2. Half way through cooking the pasta, start patting the chicken dry with a clean kitchen towel for the pasta recipe.

3. Season the chicken on all sides with salt and pepper. In a very large pan, put the olive oil and remaining ? tablespoon of butter and keep over a medium flame. Cook until completely melted and foamy and then add the chicken. Saut? brown and cooked through for the pasta recipe. Cook the chicken over a low flame to avoid burning it.


4. Remove the chicken from the pan and put on to a cutting board and cut into thin slices for later in the pasta recipe.

5. Keeping the flame low, add the garlic to the same pan that you cooked the chicken in. Keep stirring for a little while till the garlic is fragrant but not brown.

6. Add the broccoli, the broth and salt to taste for the sauce of the pasta recipe. Keep stirring to dissolve the browned bits on the bottom of the pan.

7. Cover the pan and turn the flame to medium. Keep cooking until the broccoli is just tender but not overcooked.

8. Add the chicken to the pan as well as lemon juice, zest, walnuts and the buttered pasta. Stir thoroughly to mix the pasta recipe completely.

9. The pasta recipe should be full of flavour and have a lemony zing. Add more seasoning according to your taste.

10. Add the parmesan cheese to the pasta recipe just before serving.

* 4 clove garlic, thinly sliced

* 1 cup grape tomatoes, halved

* 8 large basil leaves, torn

Directions:

1. Start your pasta recipe by bringing a large pot of salted water to boil. Cook the shell pasta until al dente. Drain and make sure you reserve ? cup of the cooking water.

2. Meanwhile, in a medium, deep pan, heat ? inch of vegetable oil until shimmering.


3. Add in the chickpeas and cook over a high flame until nice and crisp for the pasta recipe. Transfer them to a plate and put a paper towel on top to soak the excess oil. Sprinkle with the cumin and coriander, and season with salt and black pepper according to your taste.

4. Clean the pan off the oil and add in the olive oil, garlic, and crushed red pepper for the pasta recipe.

5. Cook over a moderately high flame until fragrant. Add in the tomatoes and cook until softened, 3 minutes. Stir in the chard and cook, constantly stirring, until it's wilted. Add the salt and black pepper to season your pasta recipe.

6. Add in the pasta and reserved cooking water to the skillet and cook it over a moderate flame. Keep stirring the pasta recipe to mix well.

7. Add in the mozzarella and basil and toss the pasta recipe again.

Crock Pot Sausage & Peppers

I usually make sausage and peppers on top of
the stove, but sometimes I like to assemble
everything late morning when I have the time
and l know I will be out or busy most of the day.
It's nice not to have to fuss with dinner when 
I arrive home late or tired. I let this 
 slow cook all day and then I just need to boil
the pasta when it's time for dinner while I unwind
 and enjoy a glass of red wine. 
To the crock pot add: the sausage and peppers cut
into bite-size pieces, the chopped onion and garlic,
the seasonings. Add the spaghetti sauce.
 Add a little wine to the jar and swish around.
 Add to the pot and stir it all to combine.
 tip: I love to reuse these Mason jars. HERE, HERE.
 Combine all the ingredients, cover and cook
on low for 6-7 hours. Cook your 1/2 box penne
and stir into the pot before serving.
Serve sprinkled with parmesan cheese.
Easy!

Crock Pot Sausage & Peppers
  with Penne

3/4- 1lb hot Italian sausage cut into pieces
1 large green pepper, diced
1/2 large onion, chopped
3 cloves garlic, smashed or chopped
1 t Italian seasoning
(1/4 t red papper flakes only 
if using mild sausage)
Pasta sauce, 24-26oz jar 
(they keep changing the size!)
1/2C red wine
~~~~~~~~
Combine all ingredients, adding the wine to the
 empty pasta sauce  jar to swish out all the 
sauce before adding. Cover and cook on low for
 7 hours. Before serving add, 
 8oz cooked penne to the pot and stir
 to combine. serve with parmesan cheese.

Chicken & Mushroom Pasta Bake

Chicken & Mushroom Pasta Bake
A deliciously creamy comforting pasta dish that is full of flavour, perfect for a midweek meal.
Serves 4
Preparation time:  15 minutes
Cooking time:  45 minutes

Ingredients
25g dried porcini mushrooms
1 tbsp olive oil
6 chicken thighs, boned, skinned & cut into bite sized pieces
Sea Salt & freshly ground pepper
2 cloves of garlic, peeled & finely chopped
350g chestnut mushrooms, chopped
200ml white wine
500 ml double cream
500g dried linguine
200g Parmesan cheese, grated
10 basil leaves, torn

Preparation method

1.  Preheat the oven to 200°C/400°F/Gas mark 6.

2.  Place the porcini mushrooms in a bowl of boiling water that just covers the mushrooms.  Soak for a few minutes and set aside.

3.  In a large frying pan heat the olive oil, season the chicken and gently brown in the pan. 

4.  Now add the porcini mushrooms including the water, garlic and fresh mushrooms.  Add the wine and simmer gently until the wine has reduced slightly.

5.  Meanwhile cook the spaghetti as per packet instructions and drain well.  Add the cream to the chicken and bring to the boil the remove from the heat.

6.  Add the drained spaghetti, basil and add ¾ of the Parmesan cheese, stir through.  Transfer to a baking dish and sprinkle with ½ the remaining cheese.  Place in the oven and bake until golden & crisp.  To serve divide between warmed serving plates, enjoy!

Pappardelle alla Bolognese

Pappardelle alla Bolognese

A delicious rich and slowly simmered sauce, which tastes even better the next day – if you can wait that long!
Serves 4
Preparation time: 15 minutes
Cooking time: 2 hours 15 minutes

Ingredients

2 tbsp olive oil
100g pancetta, chopped into lardons
1 onion, finely chopped
2 garlic cloves, finely chopped
1 carrot, peeled & grated
3 garlic cloves, peeled & crushed
600g lean minced steak
125g button mushrooms, sliced
300ml red wine
2 tbsp tomato puree
400g tin of chopped tomatoes
1 tsp dried oregano
1 good pinch of sugar
Salt & freshly ground pepper
100ml double cream
450g pappardelle, cooked as per packet instructions
Freshly grated parmesan, to serve


Preparation method

1.  Heat the oil in a large saucepan and fry the pancetta for 1-2 minutes.  Now add the onion, garlic and carrot, fry for 5 minutes stirring occasionally until softened.

2.  Stir in the mince, cook for 10 minutes until evenly coloured and stir in the mushrooms and fry for a further minute.  Now add the wine, tomato puree, tomatoes, oregano, sugar and season to taste and bring to the boil.

3.  Reduce the heat, cover and simmer for 1 ½ hours and stir occasionally.  Pour in the cream, stir through, cover and simmer for a further 30 minutes.

4.  Cook the pappardelle as per packet instructions, drain well and spoon the Bolognese over and serve with parmesan cheese.

Penne with Asparagus, Olives & Tomatoes


Penne with Asparagus, Olives & Tomatoes

A delicious pasta dish which is full of crisp, fresh summer flavours and is very quick & easy to make!
Serves 4
Preparation time:  15 minutes
Cooking time: 15 minutes

Ingredients
400g Penne
 Bundle of asparagus, trimmed & cut in half
2 tbsp olive oil
1 garlic clove, peeled & sliced
24 green olives, pitted & sliced
24 cherry tomatoes, halved
1 lemon, zest plus a squeeze of juice
3 tbsp mascarpone
Sea Salt & freshly ground pepper
1 tbsp butter
60g Parmesan, freshly grated
60g Pecorino, freshly grated
10 basil leaves, chopped



Preparation method

1.  In a large pan of salted water, cook the pasta as per packet instructions, drain and set aside.

Delicious Asparagus Penne



It's Spring, well, so they say as the weather so far hasn't been the best but Spring means asparagus is in season.  I love asparagus!  I found this recipe in the "Rachel Ray's Big Orange Book". It makes a great side dish when serving fish.   The recipe serves 6-8 but is easily halved.  Taste like Spring!



  • salt (for pasta water)
  • 1 lb thin asparagus, trimmed of ends
  • 1 lb  penne
  • 1 teaspoon extra virgin olive oil
  • 1 tablespoon butter
  • 2 large garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 3/4 cup vegetable stock (or chicken broth)
  • 3/4 cup half-and-half
  • 2 tablespoons Dijon mustard
  • 2 teaspoons grated lemon zest
  • salt & black pepper
  • 2 tablespoons fresh tarragon, finely chopped, a couple of sprigs (or use 2 teaspoon dried tarragon)
  • 1 lemon, juice of
  • grated parmigiano-reggiano cheese
  1. Bring a large pot of water to a boil. Salt the water. Drop the asparagus in for 3-4 minutes, then remove, drain, and chop into 2-inch pieces. Add the pasta to the water and cook to al dente.
  2. To a skillet placed over medium heat, add the EVOO and butter. When the butter melts into the oil, add the garlic and gently cook for 2 to 3 minutes, then sprinkle the flour into the pan and cook for 1 minute, stirring. Whisk in the stock, half and half, mustard, and lemon zest. Season the sauce with salt, pepper, and tarragon, and cook for 2 to 3 minutes to thicken. Add the lemon juice, and gently toss the asparagus and pasta with the sauce to coat. Turn off the heat and adjust the salt and pepper to taste, then top with grated cheese and serve.  Serves 6-8

How To Make Pasta Right From The Beginning (rajiv tiwari)
