Summer Beer

This cocktail is perfect for the summer.  You can keep all the ingredient on hand and make it in a snap.  So easy too, just pour it all into a pitcher and serve over ice.  I've tried this with other beers but Leinenkugel's Summer Shandy is the best.

1 (12 ounce) can frozen lemonade concentrate
2 (12 fluid ounce) Leinenkugel's summer shandy bottle beer
12 fluid ounces vodka
crushed ice

In pitcher pour in the lemonade concentrate, beer and vodka. Blend until smooth. Pour over crushed ice.

Makes 4-6 servings

Favorite Margarita

 Happy Cinco De Mayo!
These Margaritas are my favorite because the pineapple juice cuts the sour of the lime and sweetens the drink perfectly. If there is any extra just freeze it, it doesn't freeze solid because of the liquor and it's ready for you whenever you want a margarita. Even better make up a few batches ahead of time and freeze.  


Ingredients: tequila, triple sec, limeade, pineapple juice and ice
If you want salt, use a lime sliceo go around glass rim to moisten and dip in salt (kosher).
Blend all the ingredients in blender and serve. These went great with the guacamole I made today!



Ingredients:

1/4 cup Triple Sec
6oz can Dole pineapple juice
Ice cubes
Lime slices
Directions:
Rub rim of cocktail glass with wedge of lime. Place salt (I like to mix salt and sugar) in saucer; spin rim of each glass in salt (Optional). Set prepared glasses aside. Combine limeade concentrate, tequila, and Triple Sec and pineapple juice in container of an electric blender. Add enough ice cubes to fill blender; blend well. Pour beverage into prepared glasses; garnish with a slice of lime, if desired.

Favorite Margaritas

I have to repost this recipe as today is National Margarita Day! As you can see by the title these are my favorite Margaritas. The pineapple juice cuts the sour of the lime and sweetens the drink perfectly. Celmentine Cosmos

I made these for the first time last Christmas (a few times!) and can't wait for an opportunity to make them again.  This drink is amazing!  These Cosmos are great to make ahead for entertaining.  Easy and a fun use of a Christmas time fruit.  Found the recipe on Foodnetwork.

Ingredients:
3 clementines, plus 1 very thinly sliced, for garnish
1 cup sugar (I only use 1/2 cup sugar)
1 cup water
2/3 cup cranberry juice
1/3 cup fresh lime juice
1 1/2 cups vanilla flavored vodka (I used only 1 cup) (I also like citon vodka better than the vanilla)




Directions:
Wash clementines.  Cut the clementines into quarters and squeeze their juice into a saucepan. Add the sugar, water and clementine flesh and bring to a boil over medium heat. Reduce the heat and simmer the mixture for 5 minutes. Pour into a strainer set over a measuring cup, pressing on the solids to remove as much liquid as possible. Discard the solids, cool the liquid to room temperature and pour into a pitcher. Add the cranberry juice, lime juice and vodka and stir well. Refrigerate until ready to serve. Put 4  martini glasses in the freezer.

To serve, pour the mixture into an ice-filled cocktail shaker and shake until very cold. Pour into martini glasses (I rimmed the glasses with sugar) and garnish each with a clementine slice. Drink up and enjoy!


Hint:  Have an extra batch of the simple syrup made, then you can whip up a new batch in a snap if need be.

Fruit Smoothies




I love fruit smoothies! Easy to make and packed with good things that taste so good on a hot summer day.



frozen pineapple
frozen peaches
frozen mangos
frozen blueberries, strawberries
Yoplait Original Tropical Peach (99% fat free) or any flavor you like
Dole 100% Orange, Peach and Mango juice



I don't measure the ingredients out because then it wouldn't be a fun easy recipe. All you do is for two large (4 small) servings is fill blender half way with each fruit. You can pick and choose the fruit or use all the above. Adding a banana is also good. Add 1-2 cartons of yogurt and juice. Add juice as you need it to make the fruit smoothie nice and thick.

Hint: Don't over crowd the blender. It only takes minutes to have another batch done. I use a Kitchen Aid Blender and it works great, smooth with no lumps.

Frappuccino

Cool, refreshing and low cal.


Frappuccino
                       
In a blender combine:
1 C double strength coffee
1 C milk
2 C ice
3 T sugar ( or use Splenda)
vanilla, a dash
cinnamon, a sprinkle
(optional 2 T chocolate syrup for Mochaccino)
Give it a whir until nice and frothy, and the ice is combined well.
Pour into a mug and drive right past Starbucks.

Clemintine Cosmos

This last week before Christmas I entertained a lot and loved every minute of it.  BUT I didn't take many pictures of the food I prepared.  I either forgot or I just didn't have the time to stop.  Not a second to spare before the quests showed up.  Anyway I would like to applaud those of you that blog recipes and take amazing pictures.  I'll never understand how the Pioneer Woman does what she does.  Check out her blog, it is AMAZING!
This is one recipe I remembered to take a picture, only because I made them a few times.  This drink is amazing!  These Cosmos are great to make ahead for entertaining.  Easy and a fun use of a Christmas time fruit.  I will look forward to these every Christmas.  Found the recipe on Foodnetwork. 


Ingredients:

Frozen Strawberry Margaritas


Tequila keeps this recipe from freezing solid, so the mixture maintains a slushy consistency. The slush is nice to have in the freezer when holiday guests stop by.


Serves 8-10
10 oz frozen sweetened whole strawberries, thawed
1 can (12 oz) frozen limeade concentrate
1 cup water
3/4 cup tequila
1/4 cup triple sec


4 cup lemon-lime carbonated beverage, chilled


In blender place strawberries, limeade, water, tequila and triple sec. Blend until strawberries are chopped and mixture is blended. Pour into nonmetal freezer container (I like to use a plastic ice cream container). Cover container; freeze 8 hours or overnight until icy, stirring a few times after 2 hours.
To serve, stir mixture; spoon into 10 glasses. Top each serving with 1/4 cup carbonated beverage and stir till slushy.


I like to rim the glasses with sugar.
