Chocolate Chip Bundt Cake

This cake reminds me of a chocolate chip cookie.
Ingredients include sour cream for an
extra-moist cake.
I get to use my new Nordic Ware Classic Bundt Pan.
I loved how well their Swirl pan worked
on my Lemon Lover's Bundt Cake.
 Truly no-stick. A must when bunting!
 Mix all the ingredients in a large bowl,
 adding the mini chocolate chips last.
 Pour into a sprayed bundt pan.
 Bake @350 fo about 40 minutes.
 Let it cool in the pan for about 15 minutes,
then invert. Nothing sticks in this pan.
It releases the cake with ease. Love that.
 Dusting with powdered sugar is all it needs.
 But you could also drizzle with
Vanilla Butter Glaze.
 Mix until creamy and add vanilla.
 Scoop into a small baggie and snip off one corner.
 Starting on the inside, squeeze on the frosting.
A stripe of glaze with each slice
Loaded with chocolate chips. Enjoy a slice with
your favorite go-with cake beverage; coffee, tea,
or a glass of cold milk. 
 Bring a slice to your neighbor, friend or someone
you love, like, or just tolerate!

Chocolate Chip Bundt Cake
1 box yellow cake mix
1 box instant vanilla pudding
1 C (8 oz) sour cream
1/2 C water
1/2 C oil
3 XL eggs
1 t vanilla
1 C mini chocolate chips
Combine all ingredients except chocolate 
chips in a large bow.
Mix to combine on low and then beat
on on medium for 2 minutes. Add the 
chocolate chips and mix in on low.
Pour into a sprayed bundt pan.
Bake @350 for 35-45 minutes
Cool on rack for 15 minuted before
inverting onto a cake plate.
Let cool completely before glazing.

Vanilla Butter Glaze
3 T butter, melted
2 C powdered sugar
2 T milk
1 t vanilla
Mix until smooth.
Drizzle on cake, or put into a small
baggie, snip of a small corner
 and squeeze on stripes.

Chicken Waikiki Beach

A little retro, vintage recipe today. A tropical dish
with pineapple and green pepper in a 
sweet-and-pungent sauce.
Chicken Waikiki Beach is from the McCall's 
recipe card collection from 1973.
 Does anyone remember collecting these?
I still have mine, though I now keep them
in my antique file drawers.
 I had chicken breasts, but you can use any chicken
parts. I skinned them and left them bone-in.
 Shake the chicken in a bag with 1/2 C flour.
 Drain the pineapple chunks and add enough
water to measure 1-1/4 C.
 While you brown the chicken combine the sauce
ingredients in a medium pan.
 Bring to a boil, stirring for 2 minutes.
Put the browned chicken in a 9x13 casserole
and sprinkle with salt and pepper.
 Pour the cooked sauce over the top.
Bake for about 20-30 minutes.
 Cut up a large green pepper
 I reserve the pepper and pineapple in the
now-empty sauce pan until needed.
Take the chicken out of the oven after 20-30
minutes and add the green pepper and pineapple.
 Return to oven and bake another 20-30 minutes.
Until the chicken is done. Total time was about
45 minutes for me. It depends on  how big the
chicken pieces are. Breasts take less time.
 The sauce gives the chicken a nice glaze.
 Serve with rice
 and a spoonful of the sauce from the bottom.

Chicken Waikiki Beach
1 Chicken-cut up: 
(2 whole legs and 2 breasts, or
4 breasts; or your choice)
1/2 C flour
1/3 C vegetable oil
1 t salt
1/4 t pepper
Skin chicken, wash and pat dry with paper towels.
Coat with flour. Heat oil in a large skillet. 
Add the chicken and brown on all sides. 
Remove to a 9x13 pan. 
Sprinkle with salt and pepper. 
Pour sauce over chicken.
Sauce
1 can (20oz) pineapple in juice
1 large green pepper, cubed
3/4 C sugar (up to 1C)  
3/4 C cider vinegar
2 T cornstarch
1 T soy sauce
1/4 t ginger
1 chicken bouillon cube
Drain pineapple, pouring juice into 2-cup 
measure. Add enough water to make 1-1/4 C.
In a medium saucepan, combine the juice,
sugar, vinegar, cornstarch, soy sauce,
ginger, and bouillon cube; bring to a boil, stirring
constantly. Boil 2 minutes. Pour over chicken.
Bake @350, uncovered, 20-30 minutes. Add 
pineapple and green pepper. Bake 20-30 minutes
 longer. Serve with fluffy white rice.

Banana Cake - Refreshing, Tasty and Healthy

Ingredients

For serving

Desiccated coconut ½ cup

How to prepare it?

Take a cake pan and properly grease it. Introduce desiccated coconut into a bowl and add cold water into it. Let it stand for 10 minutes. Strain it using a fine sieve and get rid of the excess water, if any. Shift the sieved coconut into a bowl of large size and add the combination of ingredients such as banana, rice flour, sugar and coconut oil. Stir it well so as to make a perfect mixture out of these ingredients. Pour the mixture into the prepared pan. Cover it well with foil. Introduce the cake pan into a steamer. Carefully set it over a large saucepan containing boiling water. Make sure that the water does not make any contact with the base of the pan. Cover the steamer with a lid. Steam the cake for at least 2 ½ hours or until it is fairly cooked. Take the cake out of the steamer. Keep it cool. Carefully transfer it onto a plate. Spread the toasted coconut over the top. When this is finished, serve it. It would be better if you serve it along with fresh fruits.

Upside down banana cake

Ingredients

Melted butter 6 tablespoonsBrown sugar 1 cupRipe bananas 5Yellow cake mix 18 ouncesEggs 3Rum/ milk / water 1/3 cupVegetable oil ¼ cup

Method of preparation

Preheat the oven to 350 degrees F. Take two 9 in round pans and properly grease and flour them. Melt the butter by heating it over low temperature. Split up the melted butter between two pans. Disperse half of the brown sugar into each pan. Take one ripe of banana and cut it into pieces. Then, arrange it on the bottom of the pan. Take another ripe banana and cut into small pieces so as to arrange the bottom of the pan. Make a combination out of the ingredients such as cake mix, eggs, oil and rum. Beat it well using an electric mixer so that all the ingredients are properly mixed for at least 2 minutes until the mixture is fairly moistened. Mash well the leftover bananas and introduce the mashed bananas into the cake mix. Split the mixture into each pan. Keep it in the oven and bake it for 30-35 minutes until the cake tester inside the cake mixture comes to vision clearly. Allow it to cool for 5 minutes. Transfer it into serving plates. Then you can serve it.

Stir Fry Sauce

Stir fry sauce is generally that ingredient simply responsible for flavor to your stir fry. This is a ready-made stir fry flavor available in the supermarkets and they are great with beef, shrimps, squids, and pork. Just use 2 to 3 tablespoons of this concoction and you are on your way to a perfect stir fry serving 2 to 3 persons. But if you want added flavor, you can use additional tablespoons of this sauce plus grated ginger and sliced onions.

3. THE OERIENT EXPRESS STIR FRY SAUCE: This takes 10 minutes to prepare and makes four servings.
INGREDIENTS:
2/12 cup of chicken broth, fat free or low sodium type
1/2 cup corn starch
½ cup soy sauce, lite and low sodium type
½ cup light corn syrup
½ cup dry sherry
¼ cup cider vinegar
Two cloves of garlic, minced
Two teaspoon of grated fresh ginger
¼ teaspoon of ground red pepper or hot pepper flavor

THE PROCEDURE:
In a 1 ½ quart jar with tight fitting lid, combine the chicken broth, the cornstarch, the soy sauce, the corn syrup, the sherry, the vinegar, the garlic, the ginger and the red pepper. Shake them well. Can be refrigerated up to three weeks. But shake them well again before using in a stir fry. This recipe makes about four cups. In stir frying you can add the flavor according to the recipe of your stir fry. If you are only cooking for four servings, then you only need one half cup of the sauce or even less if you don't want it bubbling with the sauce.

Pancakes - Beyond any Comparison (Jim Doyle)

Gluten-free buttermilk pancakes
Ingredients
Gluten-free flour blend as per the need
Cane sugar 2 tsp
Gluten-free baking powder 1 tsp
Baking soda 1 tsp
Salt ? tsp
Buttermilk 1 ? cup
Or Milk 1 cup
White vinegar 1 tbsp
Olive oil 2 tbsps
Large egg 1
Vanilla extract
? tsp
Method of preparation

First, take a mixing bowl and mix up all the dry ingredients. Whip it properly. Take another mixing bowl and coalesce the ingredients such as olive oil, egg and vanilla in that bowl. Whip it nicely so that all the ingredients are properly incorporated. Then, pour the milk into a bowl if you are preparing the buttermilk on your own. Introduce white vinegar into this. Allow it to stay for at least 5 minutes. Then, include the ingredients like olive oil, egg and vanilla extract into the milk mixture. Whip it well. Mix the milk mixture with the dry mixture and whip it until you get a smoth mixture. Add 1-2 teaspoons of milk, if the mixture seems to be exceedingly thick. Take a skillet and heat it over moderate temperature. Slightly rub the skillet with the olive oil. Pour ? cup of the batter onto the skillet if the skillet is of medium size. If the skillet is fairly large, then, pour 1/ 3 cup of the mixture onto the skillet. Cook the mixture until the bottom turns brown in colour and bubbles start coming up on the surface. Then, flip the side and cook the other side as well so that both sides are ready. Take the rest of the batter and repeat the process. When it is cooked well, turn the heat off and let it cool. Wrap the pancakes and place them in a plastic freezer bag. Serve them when they are thoroughly cooled and set.

Major ingredients
Flour 1 ? cups
Baking powder ? tsp
Sugar 1 ? tbsps
Salt ? tsp
Baking soda ? tsp
Vegetable oil 1/8 cup
Egg 1
Buttermilk 1 ? cups
Pureed pumpkin 1/3 cup
Pumpkin pie spice 1 ? tsps
Vanilla 1 tsp

Method of preparation

Take a bowl of medium size and mix up the ingredients such as flour, baking powder, sugar, salt and baking soda. Whip it nicely so that all the ingredients are properly incorporated. Then, introduce the combination of the beaten egg, vegetable oil and 1 ? cups of buttermilk and stir it well so as to get a perfect mixture out of it. When these ingredients are properly combined, include the ingredients like pumpkin, vanilla, and pumpkin pie spice and stir it well until you get an even mixture. Take a frying pan and heat it over average temperature. If you are using griddle, then heat it over 350 degrees F. Rub the pan or griddle slightly with vegetable oil and pour ? cup of the mixture out into the pan.
Cook the side until it becomes golden brown in colour. Flip the side and cook the other side as well. Spray the pancake turner with a non stick spray so that you can flip the sides. Repeat the process using the remaining batter.

Mention the word mustard and the image of a deli-hotdog sandwich immediately pops up into mind. It wasn't exactly a favorite condiment in the house, no thanks to its pungent and tangy taste. But as you learn things along the way, it came to my attention that mustard seeds are known to be very healthy for the human body. Hence, the oils or sauces made from these seeds may have several therapeutic health benefits.

Gourmet mustards, as they are famously marketed, are made from the seeds of a mustard plant which is a vegetable related to broccoli, Brussels sprouts and cabbage. While there are approximately forty different varieties of mustard plants, there are three principal types commonly used for culinary purposes namely:

* Black Mustard (brassica nigra) - a round hard seed, smaller and much more pungent.
* White Mustard (brassica alba) - milder than their black counterpart, usually yellow in color, and are the ones used to make American yellow mustard.
* Brown Mustard (brassica juncea) - dark yellow in color, has a pungent acrid taste and is the type used to make Dijon mustard.

This incredible condiment can be used in its whole seed form, as a ground powder or grinding it into a smooth paste. To make flavors interesting, people came up with spices to add into its paste such as pepper, garlic, and paprika, along with a dash of salt. Research has it that there is no part of the mustard plant that cannot be utilized. Here we give you the recipe of one of the Spinach dish that is "HARA BHAR KABAB"

Please don't go on the name it is a pure vegetarian item which can be cook fast as well as healthy, tasty and yummy starters or snack for your child.

This recipe could be easily cooked in few minutes and ready to be served instantly.
Ingredients required for cooking:

1)Boiled Spinach leaves (Palak) leaves (2 cups)
2)Boiled potatoes (5-6 piece)
3)Bread Slice (7-8)
4)Oil
5)Paste of Green Chilly & Ginger
6)Coriander leaves
7)Salt as per the taste
8)? tsp Garam Masala,
9)? tsp Amchur powder or Lemon (on availability)
10)? tsp Sugar


Method

1)Boil Spinach (palak)and remove all the water and make the paste.
2)Boil potatoes and smash it
3)Grind the bread in mixture
4)In one bowl, mix Spinach, palak, potatoes then
5)Then add all the masala, like paste of green chilly & ginger, salt , gram Masala, Amchur powder & sugar.
6)Mix all the items slowly and properly.
7) Roll each kabab into small balls or the shape you want.
8)Take a deep fry pan, heat the Oil and deep fry the kabab till it become golden brown.

Healthy and yummy food is ready to serve. Do serve it with the tomato sauce,red or green chutney or with schezwan sauce to make your starter Hara Bhara Kabab more delicious.

Lemon Lover's Bundt Cake

The real star of this pretty cake is the
Nordic Ware Heritage Bundt Pan.
The deep swirl pattern makes any cake spectacular!
 This recipe is from the 70's and starts with
cake mix and Jello.
 Mix in oil, water and eggs.
 Beat 4 minutes.
 Pour into a prepared bundt pan
(sprayed with Baker's Secret or any baking spray)
Bake until golden; about 35 minutes.
 Let cool on a rack for 15-20 minutes.
 Invert onto a pretty cake stand.
The pan easily released the cake.
 Look at those deep perfect swirls!
 Perfect for catching the glaze.
I love how easy and pretty bundt cakes are.
 I bought the Rose Bundt  pan several 
years ago and now have a nice little
 collection of pretty bundts. I often find them on 
sale; it's hard to resist.
Add more glaze or dust with powdered sugar,

Lemon Lover's Bundt Cake
1 box lemon cake mix
1 3oz.box lemon jello
3/4 C water
3/4 C oil
4 eggs
Beat all ingredients 4 minutes with a mixer. 
Spray bundt pan with baking spray.
Pour in the batter. Bake at 350 for 
35-40 minutes. Cool in pan for 20 minutes.
Invert onto cake plate and cool completely.
Dust with powdered sugar or glaze with;
1 C powdered sugar and 3 T lemon juice.
